Sunflower (Halianthus annuus L.) is a flower that is widely consumed by the world's people. The part that is consumed from the sunflower is the seeds of the flower. Sunflower seeds have many useful ingredients in them, such as high nutritional value, being a good source of unsaturated fat, protein, inorganic compounds, vitamin E. One of the plants that has the potential as an antioxidant is sunflower (Halianthus annuus L.). The purpose of this study was to determine whether sunflower seed extract pressed powder (Halianthus annuus L.) had good physical quality, to determine whether sunflower seed extract pressed powder (Halianthus annuus L.) had antioxidant activity, to determine what concentrations of sunflower seed extract pressed powder (Halianthus annuus L.) had strong antioxidant activity as a good compact powder. Testing the antioxidant activity using the DPPH method with a positive control, namely vitamin c. The results of this study indicate that sunflower seed extract (Halianthus annuus. L) can be made into solid powder preparations, has an extract antioxidant activity of 96.78 μg/mL and has antioxidant activity when made into pressed powder preparations of 176.20 μg/mL with a concentration of 2.5%, 143.51 μg/mL with a concentration of 5%, and 121.22 μg/mL with a concentration of 7.5%.

Purple yam (Dioscorea alata L.) is a local food with many sources of antioxidants, so it becomes a staple food for the community. The addition of purple yam flour to the production of cendol is expected to help increase the selling value of cendol and also purple yam. This research aims to produce cendol with the addition of purple yam flour which has antioxidant activity and liked by the panelists. A completely randomized factorial design was used in this study using 2 factors, namely the treatment of variations in the length of cooking time and variations in the concentration of purple yam flour added, so that 9 treatment combinations were obtained, namely the addition of 10%, 20% and 30% purple yam flour with a cooking time of 10, 15 and 20 minutes. The results showed that there was an effect of cooking time and the addition of purple yam flour concentration had an effect on the chemical properties and preferences of cendol.The best cendol formulation was the addition of 30% purple yam flour and 20 minutes of cooking time. The selected purple yam cendol has nutritional value: ash content 0.082%, antioxidant content 15.55% RSA, phenol content 8.33 mg GAE/g db body and anthocyanin content 15.86 mg/100 g db. Cendol substituted for purple yam flour can ward off free radicals because it has a purple pigment derived from anthocyanin, an antioxidant.

Tanara Village as a Coastal Village has a potential source of food that comes from the sea, but the people around Tanara Village are still very low in consuming sea fish directly, therefore a way is needed so that the nutritional intake / nutrition consumed is able to meet the needs of the community's body. In supporting and encouraging nutritional intake, business actors have an important role to play in creating processed fish products made from marine fish with the aim of increasing appetite because they are stimulated by the results of the product variants created. Business actors must have the courage to innovate their product variants. The Lecturer Team and the KKM Group help provide solutions through assistance in terms of strategies to create innovative variants of processed seafood products for business people. This step is carried out through mentoring and training in creating flavor variants, product packaging and marketing. Another thing is that it is hoped that after the service assistance for business actors they can be more prosperous in the economic field.

This study aims to develop an innovation in vegetable nugget production as a healthy and tasty solution for children in Tragah Village, Bangkalan, Madura. Vegetable consumption among children remains low, impacting their nutritional intake. The vegetable nugget innovation is expected to enhance vegetable acceptance in an attractive and easy-to-consume form. This research uses a community action research (CAR) approach with a product development design, community trials, and product acceptance evaluation. Data were collected through interviews, observations, and questionnaires involving children and parents. The findings show that vegetable nuggets were well received by children, leading to an increased interest in vegetable consumption. Additionally, the product meets the nutritional standards for children. The implications of this study indicate that innovations in vegetable-based food products can be an effective solution to promote healthy eating habits among children, especially in rural areas.

Dengue hemorrhagic fever is an infection caused by the Dengue virus which is transmitted by the aedes aegypti mosquito which has most frekuently occurred in humans in recent years, so it is still a world health problem. The aim of this research is to gain knowledge about what Dengue fever is and its cause, gained truly real experience in implementing nursing care for the clien Mrs “S” with Dengue hemorrhagic fever in the baji life room at Labuang Baji Hospital, Makassar for 3 days starting from 18-20 April 2023. Collected techniquest  Data was collected using interview techniquest, Observation and physical examination. The result of this examination were an assessment of heartburn, the patien stated that the paint felt like a stabbing sensation,the pain was felt  when the patient moved, and the pain was reduced when the patient changed a half-sitting position or performed deep breathing relaxation techniques and grimaced facial expression. The patient said the pain he felt usually lasted 1-3 minutes, the patient said the pain scale was 3. In nursing diagnoses there are 3 diagnoses found in real cases, namely acute pain related to biological agents,nutritional imbalance less than the body’s needs related to lack of appetite,self-care devicits are related to weakness and fatigue. In implementing the action plan for Mrs “S” patients with cases of Dengue fever refers to nursing problems in patients by paying attention to the patient’s condition. Nursing implementation for Mrs”S” is adjusted to am action plan that has been determined so that the nursing problems faced by the patient are quickly resolved or prevented.After carrying out nursing care for the three diagnoses, all diagnoses are resolved.

Background: Adolescents who experience nutritional deficiencies such as iron, calcium, vitamins, magnesium and folic acid can cause anemia. The prevalence rate of anemia in Indonesia in adolescents aged 15-24 years is 32%. The proportion of anemia in women is higher than in men. Honey is a medicine for all kinds of diseases, honey containsl important mineralsl that helpl in thel production ofl hemoglobin. Thenl honey helpsl increase calciuml absorption, hemoglobinl count andl treats or prevents anemial due tol nutritional lfactors. Objective: To determinel the effectl of giving honey onl an increase inl HB inl female adolescents who experience anemia. Methods: The research design was the Pre Experiment and the One Group Pretest Posttest approach, a sample of 23 young girls of class X, the sample used was total sampling. Test analysis using the Paired Simple T Test. The results of the study: The results of the Paired Simple T Test based on HB values before and after being given treatment showed a significant value of 0.000 <0.05 with an average value of an increase of 0.5 gr/dl. Conclusion: Therel is a positive effectl of givingl honey onl the increasel in HB inl female adolescents who experience anemia.

Background;The post partum period is the period passed by mother giving birth starting from the first day of the birth to 6 weeks of birth. In this period every mother gives birth obliged to give her baby exclusive milk, sufficient amounts of breast milk are the best food for babies and can meet their nutritional needs for the first 6 months and thus reach optimum growth. The world’s exclusive coverage is 41% whereas the world’s exclusive who breast fund target is 70% and the coverage rate for breastfeeding in Indonesia is 37.7% in Central Java Province in 2018 in infants aged 0-6 months of 32.7%, the data is still below the national target of exclusive breastfeeding, which is 80%, so management is needed to assist post partum mothers in expressing breast milk more effectively, namely by using the guinea pig technique Objective; This application aims to know the effects of marmet technique to improve and promote breastfeeding production for the post partum in RSUD Dr.Soeratno Gemolong Method; this implemention use case studies Results; this implemention shows the results of breastfeeding post partum with 1 day intervension, 3 times treatmen and 15 minutes duration, suggests that marmet techniques that could solve the breastfeeding problems. Summary; there are differences in development before and after being given the guinea pig technique in post partum mothers

Monitoring nutritional status in 2018 reached 27.5% while the WHO limit was <20%. This means that approximately 8.9 million Indonesian children experience suboptimal growth, or 1 in 3 Indonesian children is stunted. More than one third of children under the age of 5 in Indonesia are below average in height. Purpose: To analyze the relationship between the health history of pregnant women and the incidence of stunting in the working area of the Responsibilityrjo Health Center. Methodology: The research design used is quantitative research using analytic survey methods with a cohort approach. The population is 3140 and the sample is 355 respondents. Results: The average respondent was 20-35 years old with a percentage of 80%, the education of the most respondents was high school with a total of 220 respondents or 62%. Most of the respondents' occupations were housewives, namely 102 respondents or 28.7% and the highest number of respondents were multigravidas, namely 215 or 60.6%. Health history of mothers during pregnancy with CED as many as 84 respondents (23.7%) and non-SEZ 271 mothers or 76.3% And mothers who experienced mild anemia were 98 mothers or 27.6% and mothers under five who experienced moderate anemia 22 respondents or by 6.2%, there were 135 stunted toddlers with a percentage of 38%, there was no relationship between age and work with stunting with a p value of maternal age of 0.611 and a p value of work of 0.158 and there was a relationship between education and parity most of the respondents were multigravida, namely 215 or 60.6%. Suggestion: So that parents can better prepare for early pregnancy and pay more attention to their children's nutritional intake.

The toddler period is also known as the "golden age," which falls within a crucial phase of child growth and development. However, during this period, toddlers constitute a nutritionally vulnerable group. Failure to navigate this period effectively may cause children to miss their opportunity for a golden phase of growth and development. This study aims to determine the relationship between maternal knowledge and parenting styles with the nutritional status of infants aged 0-12 months. Method: The research design employed is an Analytical Survey with a Cross-Sectional Study approach. All mothers with infants or toddlers visiting the Batusura’ Health Center between March and June 2023 were included. A purposive sampling technique was utilized, resulting in 64 respondents. Data collection was carried out using questionnaire sheets. The collected data were subsequently processed and analyzed using SPSS Statistics version 25 and subjected to Chi-Square tests. The findings of this study reveal a relationship between maternal knowledge and infant nutritional status, with a p-value of ρ = 0.004. Furthermore, a connection between maternal parenting styles and infant nutritional status was observed, with a p-value of ρ = 0.008. Conclusion: A significant relationship exists between maternal knowledge and parenting styles with nutritional status.

Complementary food for ASI (MP-ASI) is food or drink that contains nutrients, which is given to infants to meet nutritional needs other than breast milk. Complementary food for breastfeeding given to infants must contain sufficient micronutrients to meet needs that are not met by breast milk alone. But until now the provision of MP-ASI to babies less than 6 months in Indonesia is still a health problem that needs attention, because there are still many mothers who give solid food to babies before the baby is 6 months old (Heryanto, 2017). According to the World Health Organization (WHO) in 2017, only about 40% of babies aged 0-6 months worldwide are exclusively breastfed, while 60% of other babies have received MP-ASI when they are less than 6 months old. This illustrates that exclusive breastfeeding is still low, while the practice of giving MP-ASI in various countries is still high. The data based on the 2018 Basic Health Research (RISKESDAS) shows 37.3% of babies aged 0-5 months get exclusive breastfeeding, 9.3% get partial breastfeeding and 3.3% get predominant breastfeeding. Predominant breastfeeding is a pattern of breastfeeding where the baby besides getting breast milk is also given a little water. Partial breastfeeding is a pattern of breastfeeding where the baby besides getting breast milk is also given artificial food such as formula milk, porridge or other food before the baby is exactly 6 months old which is given continuously or always given breast milk (prelacteal). The prelacteal food most often given to newborns is formula milk (79.8%) (Ministry of Health RI, 2018).

Background: Based on data from the World Health Organization for 2021, it is stated that the number of maternal deaths in the world reaches 830 people every day caused by complications of pregnancy or childbirth and most maternal deaths occur in developing countries including Indonesia. AKI in Indonesia in 2021 will reach 830 people. At the UPTD Puskesmas Cibugel, it was recorded that the number of pregnant women with CED in 2022 was 47 out of 359 people with a percentage of 13.2%. Objective: to determine the factors associated with Chronic Energy Deficiency (CED) in Pregnant Women at the UPTD Health Center Cibugel, Sumedang Regency in 2023. Design: quantitative study using a cross-sectional survey approach. The study population was 32 pregnant women in the working area of the UPTD Puskesmas Cibugel in the period April - May 2023. The sample technique used total sampling. Results: there is a relationship between health conditions (nutrition status) and KEK in pregnant women. There is a relationship between age and CED in pregnant women and there is no relationship between parity and CED in pregnant women. Conclusion: factors associated with the incidence of CED include nutritional status and age. Meanwhile, parity has no relationship with the occurrence of KEK. It is recommended to increase cooperation in efforts to prevent and reduce KEK in pregnant women through cross-programs and cross-sectors.

Stunting is a lack of nutritional intake with a long duration, starting from pregnancy to 24 months. The prevalence of stunted children recorded at the Tanjungpinang City Health, Population Control, and Family Planning Office increased by 1.3% in 2020 to 3.49% in 2021 and 3.91% in 2022. Based on these data, it can be seen that there has been an increase in stunting cases in Tanjungpinang City. The problem that will be the focus of discussion in this study is how to implement stunting prevention programs in the Tanjungpinang City Health, Population Control and Family Planning Office. This study aims to analyze the implementation of stunting prevention programs in the Tanjungpinang City Health, Population Control and Family Planning Office.The research approach used in this study is explained using a qualitative approach. The theory used by researchers in implementation uses Soren C. Winter's theory which includes indicators: the behavior of relationships between organizations, the behavior of lower-level implementors (apparatus / bureaucrats) and the behavior of target groups. The implementation of the stunting alleviation program at the Tanjungpinang City Health, Population Control and Family Planning Office has been going well, but it is still not optimal. This is because there are still people who do not know about stunting, socialization carried out by puskesmas officers and posyandu cadres has not been thoroughly carried out. However, the response from the community itself is very good or positive, this is because puskesmas officers continue to provide assistance and check regularly. The commitment made by the health Office in collaboration with the Ministry of Religious Affairs made an MOU so that these brides-to-be get IEC (Educational Information Communication) and with the formation of the Stunting Reduction Acceleration Team at the Tanjungpinang City level, this is nothing but an effort to reduce stunting rates in Tanjungpinang City.

For the Indonesian people, rice is life. Rice is a staple food source for the majority of Indonesia's population. Based on the method of processing, several types of rice are known, including crushed rice, polished rice, milled rice, broken skin rice, head rice, instant rice, and parboiled rice. Rice quality includes market quality, physical quality, milled quality, cooking quality and nutritional quality. Until now, nutritional quality is still neglected. This is partly because the government is still focusing on efforts to increase rice production to meet the needs of the population. After rice self-sufficiency was achieved, driven by economic improvements and technological advances, the nutritional quality of rice began to receive attention. The success of economic development has brought consumers to a status that allows demands for higher quality rice to emerge.

The Hopeful Family Program (PKH) is a poverty alleviation program. This study aims to find out what forms of Family Hope Program (PKH) assistance are available, as well as the positive and negative impacts felt from the Family Hope Program (PKH) in Balangtanaya Village, Takalar Regency. As for the qualitative descriptive research method and the type of field research. The research subjects were carried out using purposive sampling techniques and the informants in this study were 5 categories, such as pregnant women, the elderly, elementary, junior high, high school. The data collected consists of primary data and secondary data. The data collection techniques and procedures used were through in-depth interviews with a number of PKH beneficiaries, observation, documentation and data recording related to the problems of this study. The results of the study describe: 1) The forms of assistance received by PKH beneficiary communities and beneficiary families include; a. Health assistance for pregnant women and children aged 0 to 6 years, b. Educational assistance for children enrolled in SD, SMP, SMA/SMK equivalent, c. Social welfare assistance for the elderly over 60 years. 2) The positive impacts felt by beneficiaries of the Family Hope Program (PKH) assistance include; a. Pregnant women, namely getting services every month such as checking the content, giving vitamins and nutrition, b. Children aged 0 to 6 years, namely the nutritional and body health of toddlers are monitored, c. Children enrolled in elementary, junior high and high school, namely fulfilling school needs, and helping to reduce the generation of children who drop out of school, d.. Elderly (Elderly), namely social protection programs, namely health services in ensuring their welfare. 3) The negative impact arising from the Family Hope Program (PKH) is that it makes some people become dependent and do not have a business to help working families to earn other income.

Background: Overnutrition is common in Indonesia, with 13.5% of adults being overweight and 28.7% being obese. Lack of physical activity, excessive food consumption, and high consumption of risky foods such as sugar, salt, and fat are risk factors for nutritional status Objective: To determine factors related to nutritional status in mini market employees Method: Researchers used a cross-sectional design in this study involving 99 respondents. The research began from September to October 2021. Data analysis used Fisher's test and logistic regression Results: Based on Fisher's test analysis, there was a significant relationship between salt intake (p=0.041), physical activity (p=0.002), and nutritional status. Meanwhile, no significant relationship was found between sugar and fat intake and nutritional status. The results of the logistic regression test show that the factor that has the most influence on nutritional status is excessive salt intake Conclusion: There is a relationship between salt intake, physical activity and nutritional status. Meanwhile, there was no relationship between sugar and fat intake and nutritional status. The factor most related to the nutritional status of employees in Makassar city mini markets is salt intake.

Introduction: Nutritional status is a balance between a worker's nutrient intake and better endurance. Nutritional status is one aspect of occupational health that has an important role in terms of work productivity. The nutritional intake of workers will be directly proportional to the nutritional status of the worker which can be translated through a normal Body Mass Index (BMI) in the range of 18.5 to 25. Work productivity is the ability of a person or group of people to produce goods or services. Increasing work productivity is required so that the employees can have more efficient, effective, and productive performance. Objective: The purpose of this study was to describe nutritional status in workers at the PT. Bina Sukses Lestari. Methods: This study uses observational (non experimental) method with semi quantitative approach. Data  is  obtained  directly  and  virtually  through  interview  methods  and  anthropometry  measurements  so that the types of data used are primary and secondary data. The instruments used are microtoise, weight scales. Result: The sample count consisted of 16 hotel employees with different positions and levels of physical activity. Based on the results of the calculation shows there are 5 people (31.25%) who have a skinny BMI and 11 people (68.75%) have a normal BMI. Conclusion: the BMI avarage of  workers in normal status, with an avarage working time in 8 hours/day.

This research is about fish meatballs using the main raw material of tuna which is proportioned with shrimp to help give more taste and be able to increase the nutritional quality content of the product and the addition of clover puree is expected to be able to increase the nutritional content and also be able to increase the potential for rare local ingredients. used. The purpose of this study was to determine 1) the sensory quality of fish balls with the proportion of tuna and shrimp and the addition of cloverleaf puree 2) the nutritional and non-nutritional content based on laboratory tests including protein, carbohydrates, fat, water, ash, calcium and potassium 3) cost raw material for fish balls. This type of research is an experiment. Observation data collection techniques by means of sensory quality tests were carried out by 35 panelists. The independent variables in the study were the proportions of tuna and shrimp (80%:20%), (70%:30%) and 60%:40%) and clover puree (5% and 10%). The dependent variable of the research is sensory quality including shape, color, texture, elasticity, aroma, and taste. The control variables in this study include the types of materials, equipment and processing techniques. Data analysis used double anova test and Duncan's further test. The results showed 1) there was an effect on the sensory quality of making fish balls with the proportion of tuna and shrimp with the addition of cloverleaf puree including color, aroma and taste. 2) there is no effect on the sensory quality of shape, texture, and elasticity of the meatballs. 3) the selected product contains nutrition equal to or greater according to SNI 2017 including protein content 8.11%/100gr, fat 3.86%/100gr, water 36.58%/100gr, carbohydrates 49.88%/100gr, ash 1 .24%/100gr, calcium 75.80 mg/100 gr, potassium 86.90 mg/100 gr 4) the best product has a raw material cost of IDR 56,450.

Patty sandwich is a processed product made from catfish, coconut runch, and clover leaf puree which is formed into a square measuring 8 x 8 cm with a thickness of 1 cm which is used as a filling for white bread or sandwiches. The aims of this study were 1) to determine the sensory quality of patty sandwiches with the proportion of catfish and roasted young coconut with the addition of clover leaf puree, 2) to determine the nutritional content per 100 g of patty sandwich with the proportion of catfish and roasted young coconut with the addition of clover leaf puree, and 3) find out the cost of raw materials for patty sandwiches. This type of research is an experiment. The data collection technique used meted observation by means of a sensory quality test on 35 panelists (5 expert panelists and 30 semi-trained) who were assisted by a line scale observation sheet (0-15 cm). The independent variables in this study were the proportions of roasted catfish and young coconut (60% : 40%, 70% : 30%, and 80% : 20%) and the addition of cloverleaf puree (5% and 10%). The dependent variable of the research is sensory quality including shape, color, texture, aroma, and taste. The control variables in this study include the types of materials, equipment, and processing techniques. Data analysis used double anova test and Duncan's further test. The results showed 1) there was an effect of adding cloverleaf puree on shape, color, and taste, 2) there was an effect on the proportion of catfish and roasted young coconut on texture, aroma and taste, 3) there was no effect of the proportion interaction with the addition on the sensory quality of the patty sandwich on shape, color, texture, aroma, and taste.

Mung bean and sago composite flour cookies are cookies made from the main raw material of wheat flour which is composited with mung bean and sago flour to reduce the use of wheat flour and to increase nutritional content. This experiment aims to determine 1) the sensory quality of mung bean and sago composite flour cookies including shape, color, aroma, crispness, crumb, and taste 2) chemical properties based on laboratory tests which include carbohydrates, protein, fat, ash, and fiber 3) the cost of raw materials for mung bean and sago composite flour cookies. This type of research is a factorial experiment. The independent variable was the proportion of mung bean composite flour (35%, 25%, and 15%) and sago (15%, 25%, and 35%) that had gone through the starch calculation stage. The dependent variable is sensory quality which includes shape, color, aroma, crispness, crumb, and taste. The control variables of this study include the type of materials and equipment. Observation data collection technique by means of sensory quality test conducted by 35 panelists. Data analysis used single anova test and continued with Duncan test.  The results showed 1) there was an influence on the sensory quality of composite flour cookies which included aroma, crispness, crumb, and taste 2) there was no influence on sensory quality in shape and color 3) the best product had a raw material cost of Rp 8,473/250 grams.

This research is about mud cakes were made by proportioning the main ingredients, namely banana ambon puree and mung bean flour. This study aims to determine: 1) sensory quality of mud cake made from banana ambon and mung bean flour, 2) nutritional content of mud cake made from banana ambon and mung bean flour, 3) cost of raw materials needed to make mud cake made from banana ambon and mung bean flour. This type of research is an experimental study of making mud cake made from ambon banana and mung bean flour with 3 treatments with proportions of 70%: 30%, 80%: 20%, 90%: 10%. Data collection was done by observation method through sensory test. The product was rated by 40 panelists. Data were analyzed using one way anova test, followed by Duncan's test. The results showed: 1) the best product based on the results of the analysis with sensory quality is obtained in mud cake with the treatment of 90% ambon banana puree and 10% mung bean flour, 2) the results of the best mud cake product criteria test show that it has a water content of 38.26%, fat 4.98%, protein 6.24%, carbohydrates 48.50%, and ash 1.24%, 3) the cost of raw materials needed in making mud cake made from ambon banana and mung bean flour is Rp 23,646.
