The Maternal and Child Health (MCH) book is an initiative by the Indonesian Ministry of Health aimed at addressing child nutrition problems. However, at the Karang Mulia Health Center UPTD, the distribution and utilization of the MCH book among mothers of toddlers have not met the national target. The area has reported 164 cases of undernutrition and 74 cases of overnutrition in children under five. This study aims to determine the relationship between the level of maternal knowledge in utilizing the MCH book and the nutritional status of toddlers aged 12-59 months in the working area of the Karang Mulia Health Center UPTD. This correlational analytic research used a cross-sectional approach. The study population included 640 toddlers, with 90 selected samples of mothers who had the MCH book. Purposive sampling was employed, and data were analyzed using the Statistical Program for Social Science (SPSS) version 16.0, applying the chi-square test. The study found no significant relationship between maternal knowledge in using the MCH book and the nutritional status of toddlers. The p-values for the BB/A, PB/A or TB/A, and BB/PB or BB/TB indices were 0.345, 0.851, and 0.282, respectively, all greater than 0.05. There is no significant relationship between maternal knowledge of the MCH book and the nutritional status of toddlers aged 12-59 months in the Karang Mulia Health Center UPTD.

Wontons consist of skin and filling. Generally, wonton skin is made from wheat flour, oil, water and salt. In this research, wonton skin was made with different characteristics by replacing wheat flour with tangmien flour. The wheat flour in wonton skin can be replaced 100% with tangmien flour because it has fine and soft characteristics which make the wonton skin color more transparent white and have a flexible texture. One effort to increase nutritional value and appearance is by adding green spinach (amarathus hybridus l.) juice. Green spinach contains chlorophyll which can be used as a natural coloring in food processing. Green spinach is mixed with 20gr, 40gr and 60gr of tangmien flour which is useful for changing the color of the wonton skin so that it has different color variants. Research Objectives: 1) To determine the sensory quality of wonton skin which includes color, texture, aroma and taste; and 2) To determine the nutritional content which includes energy, carbohydrates, fiber, iron, and vitamins A, B, C. This research uses an experimental method. The data collection technique was carried out by observation using a questionnaire sheet in the form of an instrument with 30 panelists. The data analysis technique used was single ANOVA followed by Duncan's test. To determine the nutritional content (energy, carbohydrates, fiber, iron, and vitamins A, B, C) laboratory tests are carried out. The results of the research show: 1) There is an effect of substitution of green spinach juice on the sensory quality of color and no effect on the sensory quality of texture, aroma and taste; and 2) The nutritional content of the product is Energy 305.80 kcal/100g, Carbohydrates 38.60%, Fiber 3.80%, Iron 2.85 mg/100g, Vitamin A 98.65mg/100g, Vitamin B 4.15mg /100g, Vitamin C 8.10mg/100g.   Keywords: , , ..

Stunting is a condition of impaired growth in children under five caused by chronic malnutrition and recurrent infections, which impacts the physical and cognitive development of the child. Ajung Kalisat Village has a relatively high prevalence of stunting, necessitating effective interventions to prevent this condition. This study aims to evaluate the potential of pumpkin pudding as an alternative functional food in the prevention of stunting in children under five in Ajung Kalisat Village. Pumpkin was chosen due to its high nutritional content, such as vitamin A, fiber, and antioxidants, which are beneficial for children's growth and development. The research method involved a trial of giving pumpkin pudding to children under five over a specific period and evaluating its impact on their nutritional status and growth. The results of the study showed that the consumption of pumpkin pudding significantly improved the nutritional status of children under five and has the potential to prevent stunting. Therefore, pumpkin pudding can be considered an effective alternative functional food in efforts to prevent stunting in the community.

Nutritional status is a health condition that occurs as a result of a comparison between needs and the fulfillment of nutritional substances. There are several factors that can influence a person's nutritional status, namely suitability of needs with food intake, physical activity, increased nutritional needs due to various diseases, and other factors such as social and economic background. The nutritional status of adolescents can be described through measuring BMI/U. The prevalence of underweight in adolescents aged 13-15 years, based on research and development data from the Ministry of Health in 2013, is 11.1% (3.3% very thin and 7.8% thin) while for obese people aged 13-15 years was 10.8% (2.5% very obese and 8.3% obese). Data was obtained by interviews regarding identity, student age, weight and height measurements, exercise and physical activity habits, eating patterns and interpretation of nutritional status on Z-Score BMI according to Age. The results of this study showed that 59.5% of students had good nutritional status, 15.7% of students had overweight nutritional status, 13% of students have poor nutritional status, 10.3% of students have poor nutritional status, 1.6% students have obesity nutritional status.

According to RISKESDAS 2018 data, the prevalence of undernutrition and obesity among adolescents in West Java is concerning. The prevalence of undernutrition and obesity at Pondok Pesantren Muara Bantarkalong in Tasikmalaya Regency is also notably high. This issue is related to imbalanced eating habits and a lack of nutritional understanding among students and food handlers. The situation is exacerbated by students' preference for unhealthy snacks from outside the pesantren over the provided meals. This initiative aims to empower through the Healthy and Nutritious School Program, focusing on increasing nutritional knowledge among students at the pesantren. The results of this study indicate a significant improvement in nutritional knowledge, with the average score increasing from 6.7 in the pre-test to 8.025 in the post-test. Thus, it can be concluded that there is a notable difference in students' knowledge before and after the educational intervention.

Stunting is a condition of impaired growth in children under five years of age due to chronic malnutrition, resulting in slower growth compared to their peers. Based on the Special Index Report on Stunting Management in Central Kalimantan Province for 2021-2022, it shows that almost every city and district has reached the index threshold but is indicated to be low or the index numbers are close to the lower limit. The IKPS (Special Stunting Management Index) for Kapuas Regency in 2021 reached 51.7 with a lower limit index of 47.0, categorized as poor, and in 2022 it only reached 49.2 with a lower limit index of 43.9, also categorized as poor. The KKN group designed several educational and nutritional intervention programs to increase community awareness and understanding of the importance of adequate and balanced nutritional intake. These programs include socialization about healthy eating patterns, counseling on the importance of nutrition for pregnant and breastfeeding mothers, and the provision of healthy corn pudding. The output of this activity is demonstrated by the increased knowledge of participants about the importance of adequate nutrition.
