The provision of in-flight catering services is a crucial component in ensuring a high-quality flying experience, guaranteeing food safety and nutritional balance to support passenger health during flights. PT. Aerofood Indonesia Denpasar is committed to being an internationally recognized catering company that provides a diverse range of meals, including Asian cuisine, Japanese/Korean cuisine, Western cuisine, Nusantara and local cuisine, pastry and bakery products for airline passengers. One of the most frequently produced main dishes is Woku Belanga Fish.This study aims to provide a comprehensive overview of the importance of food safety implementation and nutritional analysis in the in-flight catering industry. The research employs a qualitative approach through observations and interviews. Food safety assessment is conducted by determining Critical Control Points (CCPs) at each stage, from raw material reception to distribution to the aircraft. The majority of product descriptions align with the Indonesian National Standard (SNI) 01-4852-1998. Laboratory examination of the Ikan Woku Belanga dish revealed a total plate count (TPC) of 1.1 × 10⁴ CFU/g, with no detectable levels of Enterobacter, Escherichia coli, Staphylococcus aureus, or Bacillus cereus. In terms of its nutritional value, when served as a lunch option for midday flights, the Woku Belanga Fish dish meets 61.5% of the energy requirement, 85.5% of protein, 60.5% of fat, and 54.7% of carbohydrates, based on an adult daily energy requirement of 2,150 kcal.

The food industry not only pays attention to aspects of nutritional value and benefits, but also aspects of food safety by implementing a prevention system at the critical point of danger, namely HACCP. PT. Aerofood Indonesia is committed to meeting food needs on board aircraft and plays an active role as a provider of supporting services for Garuda Indonesia airline as the parent company and several foreign airlines. This research was conducted with a focus on the Tuna Pasta Salad menu. The food processing process from receiving raw materials to serving is analyzed according to HACCP principles, while the nutritional content of the menu is evaluated to ensure that the meal is balanced and adequate for passengers during the flight. This research is expected to provide a comprehensive picture of the importance of implementing food safety and nutritional analysis in the inflight catering industry. This research method uses a qualitative approach by conducting observations and interviews. At each stage, food safety at ACS Denpasar is carried out through the application of HACCP. From the results of microbiology laboratory tests, no pathogenic bacteria were found. The nutritional value per serving of tuna pasta salad is 113.4kcal, Fat=5,484g, KH=11,694g, Protein=4,242g. This menu is used as an appetizer which is sufficient for 17.65% of energy, of the 30% requirement for a passenger's lunch based on the nutritional adequacy of an adult, namely 2150 kcal.

Midwives are one of the health workers in reducing maternal and infant mortality rates by providing continuous midwifery services, promotion through partnerships and empowering communities with other health workers. The sample in this study was 24 pregnant women in the second and third trimesters consisting of 12 respondents for the control group and 12 respondents for the intervention group. The time of the study was May to June at the Negri Lama Health Center in 2022. The time of the study was May to June at the Negri Lama Health Center in 2022. The results of the bivariate analysis test using Mann Whitney showed a P-Value of 0.022 (P <0.05) so Ho was rejected, which means that there is a significant effect of giving dates on increasing hemoglobin in pregnant women in the second trimester. Pregnant women, especially pregnant women who experience anemia, are expected to routinely consume iron tablets and dates because if consumed properly, dates have many benefits, especially for pregnant women and dates do not have side effects on the fetus or mother so that they can meet the nutritional needs required by the body and can maximize iron absorption.

This systematic review examines the effectiveness of antenatal classes in improving pregnant women's attitudes towards stunting prevention. The review analyzed 28 studies published between 2018 and 2023, focusing on developing countries, particularly in Southeast Asia. The methodology followed PRISMA guidelines, utilizing multiple academic databases. The analysis revealed that structured antenatal classes significantly improved maternal knowledge about stunting (68% increase in knowledge scores) and led to positive behavioral changes in nutritional practices. Regular attendance at comprehensive antenatal classes was associated with better pregnancy outcomes, with participants showing 75% higher rates of implementing recommended nutritional guidelines. Key success factors included regular class frequency, interactive teaching methods, cultural sensitivity, and strong community support. However, significant challenges were identified, including resource limitations, access barriers, and cultural resistance. The review highlighted successful adaptations such as hybrid learning models and community-based approaches. Recommendations include strengthening program design through evidence-based approaches, enhancing community engagement, developing sustainable funding mechanisms, and implementing robust monitoring systems. This review underscores the vital role of antenatal classes in stunting prevention while emphasizing the need for continued research to address existing challenges and enhance program effectiveness across diverse settings.

Tomatoes are one of the alternatives used to make tomato paste, which can be added to waffle preparation to enhance their flavor. Innovation is needed to create new products and increase the utilization of local food ingredients with economic value. The objectives of the research are: 1) To determine the public acceptance of waffles with added tomato paste, 2) To identify the best recipe for waffles with added tomato paste, and 3) To analyze the carbohydrate and fat content in waffles with added tomato paste. The experimental method involved formulating waffle recipes with varying percentages of tomato paste addition: 15%, 30%, and 45%. A total of 35 panelists participated in this study. The research results were analyzed using descriptive analysis. The findings showed that waffles with 45% tomato paste addition were the most preferred and accepted by the panelists. The most accepted waffle composition included: 130 g of wheat flour, 58 g of tomato paste, 50 g of eggs, 40 g of sugar, 190 ml of UHT milk, 3 g of baking powder, and 60 g of margarine. The nutritional value per 100 g of the best tomato paste waffle is 43.01% carbohydrates and 5.889% fat.

Stunting is a chronic malnutrition problem that has a serious impact on child growth and development. This article examines the role of families in providing healthy and nutritious food to prevent stunting in infants. Through literature reviews, case studies, and real-world conditions, it was found that the availability of nutritious food in households, good feeding practices, and mothers' knowledge of nutrition significantly influence children's nutritional status. This article suggests the importance of integrated interventions, including nutrition education for mothers, the provision of nutritious complementary foods, and social support for families, to increase the consumption of nutritious foods in infants and prevent stunting.

Tempe is an inherent food source for Indonesians, with a large number of tempe consumers in the local community. This community service program aims to improve students' understanding and skills in processing cempedak seeds into tempe, including drying methods that allow long-term storage. This activity was carried out from July to November 2024.  This activity was carried out in several stages, namely the preparation stage, the implementation stage, and the completion stage.  The program on the utilization of cempedak seeds in tempeh production shows promising potential as a food innovation based on local resources. The success rate of this program is not only measured from the production aspect, but also from the transfer of knowledge to students who act as agents of change in alternative food development. Some of the advantages of this activity program are that it provides an alternative utilization of cempedak seed waste into products with nutritional value. In addition, the production cost is relatively affordable compared to the use of soybean. The disadvantage of this program is that the availability of raw materials depends on the cempedak harvest season.

Breastfeeding (ASI) and complementary feeding (MP-ASI) are determinants of a baby's growth and development starting from the period 0 days or the day after birth until the age of 2 years. Providing nutritional intake that is less than required can cause long-term growth and development in children, which is permanent and difficult to repair. This study aims to determine the relationship between exclusive breastfeeding and MP-ASI with the growth and development of babies aged 6–12 months in the Harapan Baru Community Health Center Working Area, Samarinda City. Type of quantitative research with a cross sectional approach. The location of this research was carried out at the Posyandu in the Working Area of the Harapan Baru Community Health Center, Samarinda City. The sample in this study was mothers of babies 6-12 months with 84 respondents. Data collection was carried out using questionnaires and interviews. The data analysis technique uses the Spearman correlation non-parametric statistical test. The results of the study showed that there was a relationship between giving exclusive breastfeeding and the growth of babies aged 6-12 months (p=0.00), there was a relationship between giving breast milk and the development of babies aged 6-12 months (p=0.021), there was a relationship between giving MP-ASI and growth babies 6-12 months (p=0.022), and there is a relationship between giving MP-ASI and the development of babies 6-12 months (p=0.042). Increasing the provision of appropriate breast milk and MP-ASI is very important to achieve optimal growth and development of babies.

Stunting is a major nutritional problem faced by Indonesia. According to Nutritional Status Monitoring (PSG) data for the past three years, the prevalence of stunting in toddlers has increased from 27.5% in 2016 to 29.6% in 2017. The incidence of stunting has increased. The results of a survey in Semadam District, Southeast Aceh Regency found that during the new normal period of Covid-19, Posyandu activities held in each village followed the Covid-19 health protocol. Each village has 3 to 5 Posyandu cadres who are tasked with assisting Posyandu activities for toddlers. Semadam District is one of the stunting locus villages that receives stunting education. So it is important for the community to be provided with supplies on the importance of preventing stunting and its impact on toddlers in Semadam Village. The mandatory output targets achieved are publications in national journals with EISSN, publications in electronic mass media, activity videos uploaded on YouTube and increasing knowledge and skills of partners.

Physical activity is one of the factors that affect the nutritional status of adolescents. Lack of physical activity will lead to excess weight. The purpose of this study is to analyze the relationship between physical activity and nutritional status of eleventh grade students in high school in Palembang. This quantitative research uses a cross-sectional research design with a sample of 91 students. Physical activity was measured using the Adolescent-Physical Activity Questionnaire (PAQ-A). The nutritional status used is based on BMI/age. The correlation analysis used was Kendall's tau-b. Univariate results were obtained by the majority of students with low physical activity (f=40) and normal nutritional status (f=60). Based on the results of the correlation test, a p-value of 0.004 < 0.05 was obtained, which means that there is a significant relationship between physical activity and nutritional status based on BMI/U. With a correlation coefficient of 0.276, which means that the correlation strength is low with positive traits. Based on the results of the study, it is recommended that adolescents do enough physical activity to maintain physical fitness and health as well as normal nutritional status.

This study analyzes the evaluation of stunting reduction policies in Kuantan Singingi Regency, Indonesia, using William N. Dunn's policy evaluation theory. Stunting is a serious nutritional problem that impacts children's growth and development, especially in the first 1000 days of life. Although there has been a decrease in stunting prevalence in Riau Province, Kuantan Singingi Regency experienced an increase in stunting rates from 17.8% in 2022 to 23% in 2023, making it the highest in the province. The evaluation was conducted based on five criteria: effectiveness, adequacy, equity, responsiveness, and accuracy. The results showed that despite significant efforts in policy implementation, the target for reducing stunting prevalence has not been achieved, with communication between officers and the community still lacking. There is a shortage of skilled personnel and funds, and unequal access to health services. The policy provides a clear framework, but information about the program is still lacking in the community. The assumptions underlying the policy are quite strong, and positive impacts are starting to be seen, but challenges such as lack of training for officers remain. Overall, despite progress, there are still many challenges that need to be addressed to achieve the goal of reducing stunting effectively.

Background: Elementary school students have limited knowledge about healthy food, and the benefits of choosing healthy snacks. They do not understand the nutritional value of various types of food or the impact of consuming unhealthy snacks on their health. Students are often exposed to unhealthy snacks around them, such as fast food, snacks and sodas, and other less nutritious snacks.  Objective: This study aims to encourage changes in students' knowledge and consumption attitudes, namely replacing unhealthy snacks with healthy snacks that are beneficial to their health. Method: This study uses a pre-experimental method, with a One Group Pre Post Test design to measure students' initial abilities before and after participating in learning activities. The population of this study was all students of SDN 38 Bora, Palopo City in 2024, totaling 151 students. The sampling method used was the Cluster Random Sampling Technique as a sampling technique, because the population was quite large, and this sampling technique is often used in various studies in the health sector, 21 respondents were obtained. Results: The study showed that the average knowledge before and after was 5.90 while the average attitude before and after was 27.76, the knowledge value p value = 0.000 ≤ 0.05 then H0 was rejected using a 95% confidence level. While the attitude value p value = 0.001 <0.05. Conclusion: there is an influence of the use of Video Learning Media on knowledge and attitudes about healthy snacks for students of SDN 38 Bora, Palopo City.

Diversification of agricultural products is one strategy to increase the added value and competitiveness of local commodities. Avocado (Persea americana) is a tropical fruit that is rich in nutrients, such as healthy fats, fiber, vitamins and minerals. However, the use of avocados in Indonesia is still limited to fresh consumption and simple processing. This research aims to develop an innovative product in the form of avocado-based sponge cake as an effort to diversify agricultural products. The method used includes organoleptic testing. The research results show that the use of avocado in making sponge cake can improve the soft texture, distinctive aroma, color and unique taste. Organoleptic tests show a good level of consumer acceptance with an average score of above 50% in the aspects of taste, color and texture. Apart from that, nutritional analysis shows that avocado cake has a higher content of healthy fats and fiber than conventional cake. Implementation of this product has the potential to open up new market opportunities and provide added value for local avocado farmers.

Extension on Fish Cultivation in Buckets (Budikdamber) to groups of housewives aims to increase understanding, skills and independence in managing local resources to support family food security. This activity was carried out in Huangobotu Village, Dungingi District, Gorontalo City, using lecture, discussion and live demonstration methods. The material presented includes efficient fish cultivation techniques using buckets as a medium, as well as integration with plants as an integrated agricultural system. The results of the activity showed that participants had high enthusiasm in adopting this simple technology. In addition, they can manage fish and plant cultivation independently in the household environment, which can increase the fulfillment of family food needs. However, several challenges arise regarding water management and selecting appropriate fish feed. This program shows great potential in increasing food security, especially for housewives in urban areas with limited land. The long-term success of this program requires ongoing support in technical aspects and solving problems that arise during the implementation of Budikdamber. Through this program, it is hoped that a community will be created that is more independent in meeting the nutritional needs of the family, as well as playing a role in realizing family-based food security.

Based on the International Labour Organization (ILO), two million workers die each year due to work accidents due to fatigue. Work accidents experienced have a significant relationship with work fatigue. Finally, it results in decreased work capacity and individual physical endurance. The purpose of this study is specifically to determine the factors related to work fatigue with TKBM. In general, it is to determine the relationship between age, nutritional status, education level, insight, medical history, length of service and manual material handling on work fatigue of TKBM Tanjung Emas Port, Semarang. The type of research applied is quantitative using a correlation approach. The design applied is cross-sectional. After analyzing the data and conducting statistical tests using the Chi Square test, the results obtained were age (p-value = 0.002); nutritional status (p-value = 0.143); education level (p-value = 0.135); insight (p-value = 0.018); medical history (p-value = 0.041); length of service (p-value = 0.031); manual material handling (p-value = 0.007). The conclusion that can be drawn from this study is that there is a relationship between age, insight, medical history, length of service and manual material handling with work fatigue, and there is no relationship between nutritional status and level of education with work fatigue.

Malaria remains a global health issue, particularly in tropical and subtropical regions. In Indonesia, Papua Province specifically Nabire Regency reports a high incidence of malaria, although a decline has been observed since 2010. Infants and pregnant women are the most vulnerable groups. Nutritional status, influenced by dietary patterns, environment, and access to healthcare, plays a crucial role in susceptibility to malaria. Malnourished children are more prone to severe malaria infections due to their underdeveloped immune systems. This research focuses on Kimi Health Center in Nabire Regency and aims to explore the relationship between the nutritional status of children under five and malaria incidence in 2024. The goal of this study is to determine the relationship between the nutritional status of children under five and malaria incidence at Kimi Health Center, Teluk Umar District, Nabire Regency, in 2024. The research design employs an analytical descriptive approach with a cross-sectional method to analyze the relationship between nutritional status and malaria incidence. Data was collected at one point in time and analyzed using univariate and bivariate analysis with the Kendall tau-b test through SPSS software. The results show that nutritional status significantly influences susceptibility to malaria. Children with poor nutrition are at a higher risk of experiencing severe malaria due to immune system dysfunction. Malnutrition, such as Protein-Energy Malnutrition (PEM), worsens parasitemia and anemia. Nutrient deficiencies, including iron, vitamin A, and zinc, also weaken the immune system. Therefore, improving nutritional status is a crucial effort in malaria control within endemic areas.

Nutrition is an indicator of the successful growth and development of babies and toddlers. Thus, nutritional needs must be met to achieve this success. Fulfillment of nutrition begins when the baby is in the womb, then exclusive breastfeeding for the first 6 months of life and continued with complementary breastfeeding (MP-ASI).  The aim of providing MP-ASI is to maintain the nutritional status of infants and toddlers. By providing proper MP-ASI, the growth and development of babies and toddlers will be optimal. Mothers have an important role in preparing and serving the right MP-ASI for their babies. In particular, the mother's knowledge has a big influence on the mindset and caring attitude towards the success of providing appropriate MP-ASI. (Cindy, 2023) The aim of this community service activity is to increase mothers' knowledge about providing complementary breast milk (MP-ASI) in Alue Sentang Village, Kec. Birem Bayeun District. East Aceh. The method used in this activity is the Participatory Action Research (PAR) approach, which is an approach to learning in solving problems and meeting the practical needs of society, as well as the production of knowledge. The results obtained from this activity are an increase in mothers' knowledge about giving complementary foods to breast milk. so that it is hoped that the knowledge gained can be realized in everyday life.

The nutritional status of toddlers is an important thing that every parent must know. Malnutrition during this golden age is irreversible (cannot be recovered). Malnutrition can affect a child's brain development. Malnutrition among children under five in Indonesia appears to be increasing from year to year. Malnutrition can occur due to internal and external factors that are not prevented or addressed as early as possible and have an impact on health conditions, growth and development of toddlers, and productivity in adulthood. This phenomenon reveals the importance of preventive efforts to prevent the risk of malnutrition in children under five from all possible risk factors. This article aims to review and analyze factors that influence the nutritional status of toddlers through the literature review method. There are 5 main articles used and have been selected through search results on the Google Scholar database. The results of the study found that factors that influence nutritional status in toddler include infectious diseases, knowledge, birth spacing, socio-economics, parenting patterns.

Background: The global maternal mortality rate (MMR) in 2022 is 91.46 per 100,000 live births with the cause of death being bleeding while the indirect causes of maternal mortality are during pregnancy wheere many pregnant women experience nutritional problems such as Chornic Energi Deficiency ( CHD) and Nutritional Anemia at 8.43% (WHO, 2022). The maternal mortality rate in ASEAN is 235 per 100,000 live births with the majority of causes of death being bleeding (ASEAN Secretariat, 2022). Until now, the maternal mortality rate in Indonesia alone in 2020 was 91.45/100,000 live births. In 2021, maternal mortality will increase to 305/100,000 live births. Meanwhile, in 2022, the maternal mortality rate will decrease by 230/100,000 live births. Within a period of 3 years, the causes of maternal death included Covid 19, bleeding, hypertension in pregnancy, and heart disease (Ministry of Health of the Republic of Indonesia, 2022). The maternal mortality rate in Central Java in 2020 was 84.6/100,000 live births, in 2021 it will be 199/100,000 live births. In 2022 there will be a decrease to 98.6/100,000 live births, hypertension in pregnancy and bleeding are still the cases of death in that year (Central Health Office, 2022). Brebes Regency shows that the maternal mortality rate in 2020 was 62 cases. In 2021 there were 105 cases and in 2022 there was a decrease to 50 cases with the causes of death being bleeding, hypertension, infection and heart disorders (Brebes District Health Office, 2021) Objective: Reduce maternal and infant morbidity and mortality rates in Brebes Regency, especially the Bumiayu Community Health Center area Conclusion: After providing comprehensive midwifery care to Mrs. S aged 32 years with Chronic Energy Deficiency (KEK) at BPM Mrs. The R working area of the Bumiayu Community Health Center from the third trimester of pregnancy, childbirth, newborns, postpartum and family planning is in good condition.

Postpartum hemorrhage is a serious complication that can occur after delivery and is a major cause of maternal morbidity and mortality. This literature review aims to analyze postpartum hemorrhage as a major risk factor for anemia in postpartum mothers. The method used was Systematic Literature Review with a literature research approach using the Google Scholar database. The analysis of eight articles showed that anemia during pregnancy had a significant association with the incidence of postpartum hemorrhage, with a risk of up to 45.7 times greater than mothers without anemia. Other contributing factors included type of delivery, where sectiocaesarea increased the risk of postpartum anemia compared to normal delivery (p=0.004). In conclusion, anemia is a significant risk factor for postpartum hemorrhage that requires early detection, nutritional status monitoring, and comprehensive antenatal care to prevent complications in postpartum women.
