Donorojo Village, Pacitan Regency, East Java, has significant agricultural potential, particularly in spice commodities. However, the utilization of spices by local farmers remains limited to the sale of raw materials in traditional markets at relatively low prices and with restricted market reach. In fact, spices have high economic value and strong potential to be developed into value-added products, such as herbal beverages. This community service activity aimed to enhance the knowledge and skills of the PKK women’s group in Donorojo Village in processing spice-based “biofarmaka” as an effort to empower the local economy and strengthen the spice value chain. The methods employed included lectures, demonstrations, and hands-on practice, conducted over five days at the Donorojo Village Hall and involving 20 participants. The products generated from this activity included “jahe gajah beverage”, “instan jahe merah”, “instan beras kencur”, and “instan kunir asem”. The results indicated an improvement in participants  understanding of the health benefits of spices, hygienic processing stages, and their ability to produce instant herbal beverage products. Furthermore, this activity has the potential to strengthen linkages between spice farmers as raw material suppliers and the PKK group as processing actors. The development of spice-based “biofarmaka” provides economic value addition, expands market opportunities, and encourages the growth of rural entrepreneurship. Therefore, spice-based “biofarmaka” processing training can serve as a strategy for rural agro-industry development that supports the improvement of economic stability in Donorojo Village.

Gingerbread merupakan kue kering yang terbuat dengan bahan dasar tepung terigu dengan campuran jahe dan bubuk kayu manis. Ketergantungan penggunaan tepung terigu pada pembuatan produk pangan sampai saat ini masih sangat tinggi, salah satu upaya untuk mengurangi penggunaan tepung terigu adalah dengan memanfaatkan tepung kentang sebagai pengganti tepung terigu. Jahe memiliki beragam jenis dan karakteristik yang berbeda, penggunaan jahe yang biasanya yang digunakan dalam pembuatan gingerbread yang sering dijumpai dipasaran berupa jenis jahe merah, jahe gajah dan jahe emprit. Penelitian ini bertujuan untuk mengkaji pengaruh jenis dan bentuk jahe terhadap kualitas gingerbread cookies. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 2 perlakuan jenis jahe yaitu jahe gajah dan jahe merah, dan dalam bentuk bubuk dan cair. Hasil penelitian menunjukkan perlakuan jenis jahe berupa bubuk dan cair menunjukkan pengaruh signifikan terhadap parameter fisik dan organoleptik produk. Penggunaan jahe bubuk cenderung meningkatkan kekerasan, serat kasar, dan daya kembang, serta menghasilkan warna yang lebih gelap dan tekstur yang lebih padat. Sebaliknya, jahe cair menghasilkan gingerbread yang lebih lembut, berwarna lebih cerah, dan tekstur lebih rapuh. Analisis sensoris menunjukkan preferensi konsumen terhadap gingerbread dengan perlakuan jahe cair dari segi warna dan aroma lebih disukai, sementara dari aspek tekstur dan kekerasan, jahe bubuk lebih disukai.

Persistent elevation of blood glucose levels defines diabetes mellitus, a chronic metabolic disorder that occurs when insulin production is insufficient, diminished sensitivity of insulin receptors, or a combination of both factors. The medicinal properties of red ginger (Zingiber officinale var. rubrum) are attributed to its rich content of bioactive compounds, including gingerol and shogaol, which are considered key contributors to its various therapeutic effects. The effectiveness of red ginger extract in lowering blood glucose levels in experimental mice was evaluated in this study. A true experimental design with a quantitative approach was applied, employing a pretest–posttest control group format. The study involved twelve samples, which were randomly allocated into four separate groups. The treatment phase was conducted over a period of seven days. Findings revealed mean values of 10.4 prior to the intervention and 15.2 afterward, indicating a notable increase. A significant difference between pre-treatment and post-treatment measurements in group K1 was revealed by the statistical analysis, which yielded a P-value of 0.001 (P < 0.05). It was observed that red ginger extract, given at 100 mg per kilogram of body weight, effectively reduced blood glucose levels in the mice studied..

Menstrual pain is one of the most common health complaints experienced by many women and often interferes with daily activities, both in academic and social contexts. This study aimed to examine the effect of red ginger decoction in relieving menstrual discomfort. The research employed a quasi-experimental design with a One Group Pretest-Posttest approach. From a total population of 487 students enrolled in the Diploma III Nursing program, 15 participants were selected using purposive random sampling. The study was conducted over a three-week period, from May 7 to May 27, 2025, using an observation sheet as the research instrument. The initial pain level was measured before the intervention using the Numeric Rating Scale (NRS). Each participant who reported menstrual pain was then given 200 ml of red ginger decoction, and after 30 minutes, pain levels were reassessed to determine any changes. The Shapiro-Wilk test was applied to examine data distribution, while differences in mean scores before and after the intervention were analyzed using the Paired Sample t-Test. The findings showed that the average pain score before treatment was 7.53 and decreased to 5.67 after the intervention, with a mean difference of 1.89. The statistical analysis yielded a significance value of p = 0.001 (p < 0.05), indicating a meaningful difference. Therefore, it can be concluded that consuming red ginger decoction is effective in reducing menstrual pain intensity. Consequently, red ginger may be recommended as a natural alternative for managing dysmenorrhea, while educational institutions are encouraged to provide health education regarding the use of herbal remedies, particularly red ginger, for menstrual pain relief. Future researchers are expected to use these findings as a reference and further explore other variables in subsequent studie.

Background of the incident of increasing cases of polycystic ovary syndrome (PCOS) with a prevalence of insulin resistance of 50-75%, insulin resistance will cause oxidative stress due to hyperglycemia which will then increase proinflammatory cytokines in TNF-α and other cytokines, thus triggering an increase in inflammation resulting in an increase in infertility cases of 89.6%. The aim is to investigate the prevention of PCOS through red ginger injected with testosterone propionate in vivo, insilico using open babel software on PyRx V.1.0. The in vivo method is an experimental laboratory study, using two five rats of the rattus norvegicus type divided into five groups using PCOS prevention through red ginger, examinations carried out on blood and ovarian organs, preparations were made which were observed with a binocular microscope on TNF-a examination with immunohistochemistry, ELISA examination on insulin levels, blood examination on blood glucose, data analysis was carried out using one way ANOVA. The study began with the preparation of control activator ligands, 6-Shogaol (Pubchem ID 5281794) and 6-Gingerol (Pubchem ID 442793) and target receptors TNF-α (PDB ID: 2AZ5) and KEAP1-NRF2 (PDB ID: 5CGJ), Insilico results that occur in red ginger are able to interact at a similar position in the interaction of TNF-α with control compared to KEAP1. In vivo research results showed that testosterone propionate 100 mg / kg BW significantly increased the inflammatory cytokine TNF-α, along with polycystic markers in folliculogenesis (p <0.05) compared to negative controls and administration of red ginger at 800 mg / kg significantly decreased TNF-α levels. red ginger also prevents the occurrence of pcos. The conclusion shows that the bioactive 6-shogaol 6-gingerol in red ginger can provide preventive benefits in polycystic ovary syndrome (pcos) by modulating the inflammatory pathway.

Tooth extraction often triggers anxiety in patients due to the use of invasive medical instruments. Anxiety management can be addressed pharmacologically or non-pharmacologically. Aromatherapy using red ginger essential oil (Gingiber Officinale var. Rubrum) is a non-pharmacological method that has the potential to reduce anxiety effectively. This study aims to determine the effectiveness of red ginger essential oil in reducing the anxiety levels of patients undergoing tooth extraction. This quasi-experimental study employed a pretest-posttest design on 96 tooth extraction patients at RSKDGM Makassar. Anxiety levels were measured using the Modified Dental Anxiety Scale (MDAS) questionnaire before and after inhaling red ginger essential oil aromatherapy for 10 minutes. Data were analyzed using the Wilcoxon test with SPSS 26. The results showed a significant decrease in patients' anxiety levels after inhalation of red ginger essential oil aromatherapy. Before the intervention, the majority of patients had moderate anxiety (58.3%), while after the intervention, mild anxiety increased to 59.4% (p-value = 0.000). Red ginger essential oil (Gingiber Officinale var. Rubrum) is effective in reducing patients' anxiety during tooth extraction procedures.

The limited knowledge of MSME entrepreneurs in Binjai Estate in managing their business finances affects the business continuity of MSMEs, causes errors in determining the amount of the cost of goods sold resulting in errors in determining the amount of the selling price, resulting in difficulty of increasing competitiveness which will affect the level of sales and profits of MSMEs. The purpose of these activities is to help MSME players increase their sales by providing simple financial management training and promoting their merchandise through social media and online shops so that later they can increase MSME sales. The methods used are observation, interview, and documentation methods. The results of this service activity are that Bandrek Jahe Merah and Gedebog Pisang MSMEs can already recognize the importance of business financial management and identify company assets to be separated from personal assets. However, further training is needed to assist businesses in making budgets and determining the cost of production and the cost of goods sold to determine the selling price of their products.

Previous studies have shown that red ginger has the potential to treat PCOS because it has been proven to be able to reduce serum FSH, LH and estradiol and testosterone, inhibit the cyclooxygenase pathway, change the pituitary axis, inhibit lipoxygenase expression in various animal studies. The purpose of this study is to prove the potential of red ginger extract as a regulator of anti-androgenic, ovulation, estrogenic activity and reduce insulin resistance. The research design used was for experimental research using a post-test-only control group design. And for the analysis of the potential bioactivity of red ginger extract as an immunomodulatory agent computationally (Insilico). Animal care was carried out in the Pharmacology and Biomedicine Laboratory and has received approval from the Ethics Committee. The sample used was a female Wistar rat on the 56th day of the experiment (after modeling). All treatments were given orally for 28 times. Independent variable = Red ginger extract. Dependent variable = Dependent variables are 1. Hormones: Testosterone, LH, FSH 2. ovarian inflammation activation (PPARγ activation and anti-inflammatory cytokines IL-4 and ROS, NFKB, TNF a. 3. Insulin resistance (insulin, glucose, HOMA IR) and 4 Lipid profile (TG, HDL, LDL, cholesterol). Control variables are: 1) Gender; 2) Age; 3) Strain; 4) Food and beverage intake; 5) Maintenance and care. Quantitative and qualitative research data. using parametric tests, namely One-Way ANOVA after meeting the requirements for normal data distribution and the same data variance. The One-Way ANOVA statistical test is continued with the Tuckey test to determine the differences in each group.

Background: The impact of hypertension that is not treated properly and uncontrolled will cause various complications, such as heart failure and coronary heart disease, in the brain there is a stroke, if it hits the kidneys there is chronic kidney failure, and if it hits the eyes there will be visual impairment. The various complications that may arise are very serious diseases and have an impact on the patient's psychology because of their low quality of life. Objective: To describe the results of blood pressure comparison before and after the application of Red Ginger Water Foot Soak Therapy in the elderly. Methods: This study used a descriptive research design with a case study approach by observing blood pressure in 2 elderly respondents, carried out 5 days for 1 consecutive week within 15 minutes. The instruments used are observation sheets, Blood Plesure Monitor, and stopwatch. Results: There is a decrease in blood pressure after giving Warm Red Ginger Water Foot Soak to Mrs. T from stage 2 hypertension to stage 1 hypertension and to Mr. S from stage 1 hypertension to stage 1 hypertension. S from stage 1 hypertension to prehypertension. Conclusion: The application of warm red ginger water foot soak therapy can potentially reduce blood pressure in the elderly with hypertension in both respondents.

Background: Osteoarthritis often occurs in the elderly aged more than 60 years which is characterized by pain in the joints when moved. In Indonesia, 65% of elderly people aged 60 years and over experience osteoarthritis. Red ginger compress is an alternative nonpharmacological treatment to reduce joint pain in the elderly with osteoarthritis. Objectives: Knowing changes in pain scale in the elderly before and after doing red ginger compresses. Method: This application uses descriptive methods on 2 respondents, with pretest and posttest in the observation sheet of pain scale measuring instruments in the form of NRS (Numeric Rating Scale). Red ginger compress is given 2x a day in the morning and evening for 14 consecutive days within 20 minutes Result: There was a change in the intensity of the pain scale in both respondents. Mrs. P from moderate scale to mild scale and Mrs. E from moderate scale to painless scale. Conclusion: The application shows that there are changes in the pain scale before and after the red ginger compress, both in the first respondent and the second respondent. Red ginger compress can reduce osteoarthritis joint pain in the elderly.

Uric acid is a severe and painful form of joint inflammation, resulting from metabolic processes in the body due to the accumulation of crystals in the joints, leading to an increased level of uric acid in the body. The joints most commonly affected are the toes, knees, heels, wrists, fingers, and elbows. Acute pain in individuals with uric acid becomes a frequent issue, involving actual or potential tissue damage that can be described as ranging from mild to severe pain. Red ginger has various uses that can alleviate pain associated with joint pain or uric acid. The warm compress of red ginger helps improve blood circulation in the body and can also reduce pain. Objective: To determine the effect of red ginger compress on acute pain in patients with acute uric acid in the Cisaat Health Center's working area. Method: The design in this study uses Quasi-experimental with a one-group pretest-posttest design approach. The total population in this study is 96 people, with a sample size of 16 respondents selected using purposive sampling. Data analysis was conducted using the Paired T-test. Results: The results of the statistical test with the Paired Samples Test showed a P-value of 0.000 < 0.05. There is an influence of red ginger on acute pain in patients with uric acid in the Cisaat Health Center's working area

Dysmenorrhea is a pain in the lower abdomen can spread to the lower back and legs. The incidence of dysmenorrhea in the world on average is very high up to (90%) while the severe painful dysmenorrhea are around 10-15%. In Indonesia the case of dysmenorrhea is around of 64.25%. The aim of this research was to determine the effectiveness of giving red ginger decoction on dysmenorrhea in young women at Assalaam Vocational School, Manado. This research uses a pre-experimental quantitative method with one group pre and post test design. wWith non-probability sampling technique and purposive sampling method based on characteristics of the population by the criteria of the researcher's. The research instrument uses an observation sheet and a Standard Operating Procedure for measurement using the NRS (Numeric Rating Scale). The sample in this study takes 12 respondents. Using the Pairet T-Test with a significance level of α=0.05. The results of this study show there is an effect of giving red ginger decoction on dysmenorrhea in young women with a P-value = 0.000 < 0.05 The conclusion in this study is giving red ginger decoction on dysmenorrhea in young women at Assalaam Vocational School, Manado are affected. And advice to respondents to used red ginger as an additional reference for reducing pain during dysmenorrhea.

Background: Hypertension or high blood pressure is when the systolic pressure is more than 140 mmHg and the diastolic blood pressure is more than 90 mmHg. WHO data (2015) shows that around 1.13 billion people in the world have hypertension. The number of people with hypertension continues to increase every year, it is estimated that every year 20.44 million people die from hypertension and its complications. Non-pharmacological management to lower blood pressure can be done independently and naturally, namely foot hydrotherapy (warm foot bath). Foot soaks can be combined with other herbal ingredients, one of which is ginger. Objective: To determine the effect of soaking feet with warm ginger water in lowering blood pressure in hypertensive patients. Method: The application was carried out using a descriptive method in the form of a case study to 2 respondents with hypertension in the form of a pretest-posttest. The application is carried out within two days for 15 minutes by sitting on a bed or chair and then soaking the feet in a basin containing warm red ginger water with a water temperature of 37°C. Findings: Based on the results of the application of warm red ginger water foot soak therapy is decrease in blood pressure in elderly patients with hypertension, namely 160/100 mmhg and 150/100 mmhg. Implications: warm red ginger water foot soak therapy can be used as a non-pharmacological technique or independent intervention in elderly patients with hypertension

Gout Arthritis is a disease characterized by pain that occurs repeatedly caused by deposits of monosodium urate crystals that accumulate in the joints as a result of high levels of uric acid in the blood. One of the complementary therapeutic measures is a warm red ginger compress in gout arthritis patients. The purpose of this research is to determine the Effect of Giving Warm Red Ginger Compresses to Pain in Gout Arthritis Patients in Mahawu Village, Manado. The design of this study used a pre- experimental (one-group, pre-post test design). The sample in this study was 35 respondents taken using a total sampling instrument. The study used observation sheets and SOPs for measurement using the NRS (Numeric Rating Scale). The data were then analyzed using the Wilcoxon statistical test with a significance level of = 0.05. The results of this study indicate that there is an effect of giving red ginger warm compresses to pain in gout arthritis patients with p value = 0.000 <0.05 so Ha is accepted and Ho is rejected. So it can be concluded that there is an effect of giving red ginger warm compresses to reducing pain in gout arthritis patients in Mahawu Village, Manado. The conclusion of the study is that there is an effect of warm red ginger compresses on Gout Arthritis patients in Mahawu Village, Manad.

Masyarakat di lingkungan Kampung Jahe yang berada di RW 14 Kel.Sendangmulyo Kec.Tembalang, yang sebagian  pegawai dan wirausaha  ,  namun lahan pekarangan rumah yang dimiliki belum dimanfaatkan secara optimal. Hal ini merupakan peluang untuk pengembangan ekonomi diwilayah tersebut, dengan cara budi daya tanaman jahe merah, hingga mengolahnya menjadi hasil olahan yang kreatif dan inovatif, yang bermanfaat untuk kesehatan dan laku dijual dengan harga yang tinggi. Peluang tersebut bisa diciptakan dengan memberdayakan ibu rumah tangga yang tidak bekerja beserta kelompok UMKM yang ada diwilayah RW14 dengan nama Sekar Taji, Metode pengabdian ini dengan memberikan edukasi kewirausahaan dan pengenalan tekhnologi informasi sebagai media pemasaran secara  online dilengkapi dengan pelatihan memasak aneka makanan tradisionil. Kegiatan tersebut dapat terlaksana juga didukung dengan kerjasama dengan perusahaan bahan pembuat makanan yaitu Rose Brand dan diikuti oleh 20 peserta Kegiatan pengabdian masyarakat ini dapat menambah pengetahuan, ketrampilan,dan  berpartisipasi aktif untuk meningkatkan kesejahteraan ekonomi.

Latar Belakang: Permasalahan ISPA masih menjadi salah satu penyebab kematian akibat penyakit menular di dunia. Hampir 4 juta orang meninggal karena infeksi saluran pernapasan akut tiap tahun. Pemberian herbal tradisional sebagai terapi non farmakologi dapat digunakan sebagai terapi pendamping perawatan medis dalam menangani ISPA pada balita. Kandungan herbal jahe dan madu dikenal dapat menurunkan tingkat keparahan batuk di malam hari sehingga mengurangi gangguan tidur. Kualitas tidur yang baik dapat memperbaiki kondisi ISPA sehingga tidak terjadi komplikasi yang lebih buruk. Tujuan: Memberikan edukasi terkait minuman herbal jahe dan madu sebagai pendamping obat farmakologi terhadap kejadian ISPA. Metode: Pelaksanaan kegiatan ini dilakukan secara langsung bertatap muka dengan sasaran sehingga lebih efektif, meyakinkan dan mengakrabkan hubungan antara penyuluh dan sasaran serta cepatnya respon.. Hasil : Klien memahami dan mengerti tentang manfaat dan teknik terapi pemberian minuman jahe merah dan madu. ,Klien memahami dan mengerti tentang langkah-langkah melakukan terapi pemberian minuman jahe merah dan madu sebagai pendamping obat farmakologi. Saran: Diharapkan dapat digunakan sebagai obat herbal yang aman tanpa menimbulkan efek samping

Pembelajaran di Kampus Merdeka menawarkan tantangan dan peluang untuk pengembangan kreativitas, kapasitas, kepribadian dan kebutuhan baik mahasiswa maupun dosen, dengan menuntut kemandirian dalam mencari dan menemukan pengetahuan baru melalui kenyataan dan dinamika lapangan. Sebagai perwujudan dari Kriteria IKU ke 2 dan IKU ke 3 adalah kegiatan pengabdian masyarakat yang dilaksanakan antara dosen, mahasiswa dan mitra (masyarakat). Pengabdian masyarakat ini dilakukan di desa Susukan Kabupaten Semarang, yang penduduknya mayoritas sebagai petani. Sasaran Mitra adalah perempuan dan remaja Putri. Metode yang diberikan adalah dengan memanfaatkan pekarangan sempit menjadi lahan produktif dengan penanaman jahe merah. Pengabdian masyarakat dilakukan mulai proses dengan menyiapkan lahan dengan menggunakan polybag yang di dalamnya diberikan tanah yang telah diberikan pupuk. Proses pemeliharaan dengan memberikan pupuk non kimia (ramah lingkungan), dan selanjutnya pengolahan hasil panen jahe dengan diolah menjadi aneka produk. Pengabdian ini dilakukan secara bertahap selama tiga kali setiap hari minggu dari tanggal 7-21 Januari 2022. Melibatkan sepuluh dosen dan lima mahasiswa. Hasil penelitian ini dapat memberikan tambahan penghasilan dan memanfaatkan pekarangan yang sempit menjadi lahan produktif, sehingga para perempuan tidak perlu bekerja di ladang Perempuan bisa bekerja di rumah dengan hasil tambahan.

Jahe merah (Zingiber officinale Rosc.) merupakan tanaman multi fungsional karena selain sebagai rempah, tanaman ini termasuk empat besar tanaman obat yang banyak digunakan diantaranya untuk: jamu gendong, industri kecil obat tradisional, industri obat tradisional, industri makanan/minuman dan bumbu . Selain itu, kandungan minyak atsiri jahe juga merupakan salah satu peluang usaha peningkatan nilai ekonomis jahe, berkembangnya agroindustri obat-obatan herbal dan kosmetik, menjadikan peluang pengembangan jahe sebagai salah satu bahan bakunya menjadi sangat terbuka. Balsem merupakan sediaan yang penggunaannya di oleskan kekulit dengan tangan dan memberikan rasa panas yang sulit hilang. bentuk sediaan balsam yang di oleskan dengan tangan ini di perlukan suatu inovasi yang memiliki sifat menghangatkan, menenangkan dan juga memiliki aroma yang menyegarkan. Tujuan dari penelitian ini adalah untuk mengidentifikasi kandungan metabolit sekunder ekstrak etanol jahe merah dan memformulasi sediaan balsam dari ekstrak etanol jahe merah . Metode yang digunakan dalam penelitian ini adalah diskriptif kualitatif dalam memformulasikan memformulasi sediaan balsam dari ekstrak etanol jahe merah dengan Hasil penelitian menunjukan ekstrak etanol jahe merah  mengandung senyawa metabolit sekunder: flavanoid, saponin, tannin dan fenolik. Uji organoleptis menunjukan berwarna coklat tua, berbau oleum menthea, bentuk semi padat, semuanya homogenitas, dengan pH 6, uji daya sebar 5 cm, uji daya kejat selama 6 detik. Kesimpulan menunjukan balsem jahe merah memenuhi persyaratan evaluasi sediaan balsem.

Jahe merupakan salah satu jenis tanaman obat yang dikembangkan sebagai bahan obat tradisional. Namun produktivitas jahe merah mengalami penurunan. Tujuan kegiatan ini memberikan pengetahuan pesemaian jahe merah.  Kegiatan dilakukan Desa Wonorejo, Kecamatan Jatiyoso, Kabupaten Karanganyar. Metode yang digunakan yaitu sosialisasi dan pelatihan. Kegiatan dilaksanakan dengan beberapa tahapan sebagai berikut: 1) Koordinasi dengan tokoh masyarakat dan petani mitra; 2) Sosialisasi tentang hasil penelitian tahun 2020; 3) Penyuluhan tentang pesemaian jahe merah, dan 4) Pelatihan pesemaian jahe merah. Hasil kegiatan menunjukkan bahwa petani sangat tertarik dan berminat dalam budidaya jahe merah, yang tercermin dari keaktifan dalam berdiskusi maupun dalam melaksanakan pelatihan. Hasil demplot pada pelatihan menunjukkan bahwa pemberian pupuk kandang dengan proporsi tanah: pupuk kandang 2:1 baik pada lahan maupun polybag meningkatkan persentase daya kemunculan tanaman dan pertumbuhan tanaman, sehingga hal ini dapat direkomendasikan pada tingkat petani jahe merah.

Antioksidan merupakan senyawa yang penting untuk menjaga kesehatan tubuh karena fungsinya sebagaipenangkap radikal bebas yang terbentuk dalam tubuh.Daun katuk, rosella, dan jahe termasuk tanaman yangkaya antioksidan.Salah satu usaha untuk memperoleh sumber antioksidan secara praktis adalah denganmengolah daun katuk, bunga rosella dan jahe menjadi minuman fungsional.Penelitian ini bertujuan untukmenentukan formula minuman fungsional katuk-rosella dan penambahan ekstrak dari berbagai jenis jaheyang memiliki aktivitas antioksidan tinggi dan disukai konsumen.Penelitian dilakukan dengan RancanganAcak Lengkap (RAL) faktorial yang terdiri dari 2 faktor.Faktor pertama dengan perbandingan daun katukdan rosella (90:10, 80:20, 70:30) sedangkan faktor yang kedua yaitu variasi jenis jahe (jahe emprit, jahegajah dan jahe merah). Hasil penelitian menunjukkan bahwa kombinasi perlakuan konsentrasi daun katuk: rosella 80:20 dengan ekstrak jahe merah 8% merupakan perlakuan terbaik didasarkan pada aktivitasantioksidan dan uji organoleptik terbaik yang terdapat pada minuman. Pada perlakuan ini dihasilkan pH2,83, padatan terlarut 15,46%, aktivitas antioksidan DPPH 54,65%, total fenol 0,98 mg GAE/100ml, vitaminC 68,82 mg/100ml, serta uji organoleptik terhadap flavor jahe 2,13, flavor katuk 1,86, rasa asam 2,73, warna3,65 dan kesukaan keseluruhan 2,20.Kata kunci:antioksidan, minuman fungsional, daun katuk, rosella, jahe
