Traditional markets are central to community economic activities and play a significant role in the distribution of local food products. Therefore, markets reflect the diversity of food crop commodities available in a region. This diversity holds vital importance in supporting human health balance. The more diverse the plant species available in a region, the greater the variety of nutrients that can be obtained, such as minerals, vitamins, fiber, and other essential nutrients. Furthermore, the diversity of food crops is also valuable from cultural and environmental conservation perspectives. This study aims to identify and document the diversity of food crops traded in Grogol Market and Telukan Market, Sukoharjo Regency, Central Java. The research employs a qualitative descriptive method. Data were collected through observations and semi-structured interviews using an ethnobotanical with 55 respondents who are traders in both markets. The data were then classified based on family, edible plant parts, and commodity categories. The study's findings revealed that 124 species or varieties of plants from 39 families are traded in Grogol Market and Telukan Market. The Zingiberaceae family has the highest number of species found in both markets. Vegetables are the largest commodity group traded, followed by fruits, spices, and staple foods. The parts of plants traded include fruits, leaves, tubers, seeds, rhizomes, stems, and flowers. Based on the results, the diversity of food crops traded in Grogol Market and Telukan Market is relatively high, reflecting local potential that supports community health, cultural heritage, and environmental sustainability.

Vitamin D is an essential steroid hormone that plays a role in calcium and phosphorus regulation and has the potential to affect sleep quality. Vitamin D deficiency in the elderly often occurs due to minimal exposure to sunlight and age-related physiological changes, which contribute to the high incidence of sleep disorders, including insomnia. This community service activity aims to screen vitamin D levels in the elderly as a cause of insomnia through the Plan-Do-Check-Act (PDCA) approach. The activity was carried out at Panti Bina Bhakti, South Tangerang, involving 93 elderly participants aged > 65 years. The results showed that the average vitamin D levels among the age groups 61-70 years, 71-80 years, 81-90 years, and 91-100 years were 7.6 mg/dl, 7.2 mg/dl, 7.6 mg/dl, and 13.9 mg/dl, respectively. Interventions through vitamin D supplementation, sunlight exposure, and education in the form of sleep hygiene are effective in improving the health and sleep quality of the elderly.

Dried noodles made from egg and flour that have round and long shape. In this research, dried noodles were made differently in general because of using taro flour and kale leaves extract as a raw material. Taro flour is a gluten free flour that is rich in fiber. Kale (Brassica oleracea var. sabellica) is superfood which have high quantity of antioxidants like vitamin C and flavonoids. This research aimed to determine physicochemical and organoleptics characteristic of dried noodles of taro flour with addition of kale leaves extract. The observation used a two-factors factorial Completely Randomized Design (CRD) were the ratio of taro flour : wheat flour (85:15, 75:25, 65:35g) and the concentration of kale leaves extract (1:10, 2:10, 3:10 ml) with two-replication. The best results showed that the combination of 65:35 taro flour : wheat flour with addition of 3:10 kale leaves extract was based on high antioxidant activity. The results of this combination showed moisture content 5,42%, ash 2,74%, fiber 7,43%, protein 7,56%, antioxidant activity 13,71%, flavonoid total 1,36 mgQE/g, vitamin C 30,8%, color L* 78,72, color a* -1,78, color b* 18,11, hardness 13,84 N, chewiness 13,29 N, aroma 3,36 and kale taste 3,12. Based on the observation, dried noodles of taro flour with kale leaf extract influenced all physicochemical and organoleptic test results.

Velva, a kind of frozen dessert, made from fruit that contains nutrients and help the body's metabolic processes as a source of energy. Red dragon fruit (Hylocereus polyrhizus) is used in the production of velva in order to get a good color and Moringa to increase antioxidant activity.  The purpose of this study was to determine the appropriate substitution ratio between velva, dragon fruit, moringa leaf extract, and stabilizer to produce dragon fruit velva with good characteristics, namely high antioxidant and preferred by consumers.  This study used a factorial completely randomized design (CRD).  The factors used were the concentration of Moringa leaves (8, 10, 12 g) and the concentration of the type of stabilizer (CMC 1,26%, cornstarch 1,26%, carrageenan 1,26%).  The best chemical analysis was treatment concentration of carrageenan stabilizer 1,26% with the addition of 8 g Moringa leaf extract with antioxidant activity 16,85%, crude fiber 0.63%, vitamin C 4,33%, reducing sugar 11,83%, total phenolic 13,93mg.GAE/ml and pH 3,5.  Physical analysis with melting power 47.00 minutes/hour, overrun 13,00%, TPT 4˚Brix and TAT 1.14%.  The results of the red dragon fruit velva sensory test with various types of stabilizers and the addition of Moringa leaves, as well as the combination of treatments between the two had no significant effect on color, texture, taste, aroma and overall preference.  The best organoleptic analysis was the P3K1 treatment (concentration of carrageenan stabilizer 1,26% with the addition of 8 g Moringa leaf extract) with a color value of 3.06, taste 2.57, aroma 2.78, texture 3.50 and overall preference 3,42.

Red roses (Rosa damascena Mill) are a type of rose with a distinct aroma and a deep red color. Roses are usually used as decoration, but it also has health benefits. Roses have bioactive compounds and anthocyanin pigments that act as antioxidants. The expected outcome of this research is to produce rose water products that have a strong aroma and have high antioxidant activity. This study used a factorial Completely Randomized Block Design (RAKL) method. The factor used is the variation of the distillation method. While the length of the extraction process was used as the sampling time. The correct distillation method to produce rose water which has high antioxidant activity is treatment with variations of the steam distillation method. The steam distillation method obtained the following results: pH 4.07, vitamin C content 40.70 mg/100g, total phenol content 47.10 mg GAE/g, antioxidant activity of DPPH 64.20%, FRAP value 98.97% and sensory test (scent) 3.34.

Base cake bars on the market are madse by soy flour mixed with dried fruit and are unusually consumed as snack in the bars. The base cake bars can be made without flour with high gluten. Mocaf is an alternative carbohydrate source as well as a substitute for wheat flours. The use of rice flour and mocaf flour was chosen becaused of the high fiber content in the various types of rice used. Moringa flour is rich in protein, minerals and vitamins. The advantages of adding Moringa flour can improve the quality of the base cake bar, especially fiber. Determining the formulation of the moringa cake bar base with various types of rice flour which has a high fiber content and is preferred by consumers is the aim of this study. This study used a two factor factorial Completely Randomized Design (CRD) with two replications. The factor used are the ratio of rice flour with Moringa leaf flour (95/5, 90/10, 85/15) and various types of rice flour (red, black, white). Chemical and organoleptic analysis of the best rice-moringa base cake bars was the B3K2 treatment (type of white rice with a ratio of rice flour: moringa 90/10) with 5.21% water content, 2.29% ash content, 17.29% fat content, 9.50% protein content, crude fiber 12.83% and 65.71% for carbohydrates. Organoleptic results with, Moringa flavor 2.19, sandy texture 3.15, density 2.49 and overall preference 3.31.

Jelly candy is a transparent and clear physical appearance, produced from a combination of fruit juices, gelling agents, or flavoring ingredients. Objectives; To determine the acceptability and chemical quality (calcium, potassium, vitamin C, and water content) of jelly candy made from dragon fruit and moringa leaves. Method; The research used a Completely Randomized Design (CRD) experiment with 5 treatments and 2 repetitions, resulting in 10 experimental designs. Acceptability testing was carried out by 30 moderately trained panelists. Data analysis used Kruskal Wallis and continued with the Bonferroni test. Results; results showed that the optimal formulation was 90 grams of dragon fruit and 10 grams of moringa flour, which was rated positively. The hedonic quality test revealed a purple color, a chewy texture, a flavor predominantly of dragon fruit with a slight taste of moringa leaves. The formulation contained 601 mg of calcium, 112 mg of potassium, 26.77% water, and 10.20 mg of vitamin C per 100 grams. Conclusion; The candy formulation with 90 grams of dragon fruit and 10 grams of moringa flour received a favorable rating, demonstrating a purple color, chewy texture, predominant dragon fruit flavor with a hint of moringa, and appropriate nutritional content.

Kazuki Resto is an Eastern-themed café and restaurant located at Jl. Raya A.H Nasution No. 39A, Bandung, open from 11:00 AM to 11:00 PM. To diversify the menu, the author introduces choipan, a Chinese snack made from genjer leaves (Limnocharis flava) and minced shrimp. The term "choipan," derived from Hakka, means "vegetable cake," utilizing genjer leaves that are rich in nutrients such as vitamin C, potassium, calcium, and phosphorus. This study aims to evaluate the panelists' preferences for genjer and shrimp-filled choipan with chili sauce, as well as analyze the standard recipe and nutritional value of the product. The method used is research and development, with data collection through organoleptic tests involving 25 panelists, including experts from various backgrounds. The results indicate a favorable preference level, with presentation scores of: appearance 84%, color 84%, aroma 72%, texture 88%, and taste 84%. The standard recipe for choipan includes 60 grams of rice flour, 30 grams of tapioca flour, 150 ml of water, 55 ml of oil, and other ingredients. Nutritional analysis shows an energy value of 40.9 calories, protein 1.31 g, fat 2.03 g, and vitamin C 13.86 mg. The author recommends using fresh, high-quality genjer leaves to avoid bitterness.

Therefore, the purpose of this community service is for KKN students to collaborate with the village government to run stunting prevention programs such as posyandu, providing nutritious food and vitamins. The result of this service is that the community participates to help prevent the continuation of this stunting problem in children, and participates in posyandu activities regularly to get vitamins and nutritious food to prevent stunting.

Adolescent girls are a vulnerable group to experience anemia, if there are no prevention efforts, awareness among adolescents about the problem of anemia will affect problems in growth and development, both physically and academically. The main cause of anemia is insufficient intake of iron which cannot be obtained without only by taking blood-boosting drugs but this can be done by consuming a variety of foods that fulfill the nutrients containing iron, vitamins to prevent anemia, where teenagers nowadays pay less attention to healthy food intake. The purpose of this community service is to increase the level of student knowledge/ students through education about anemia, knowing the risk factors for anemia in adolescents, knowing the physical characteristics or symptoms and the consequences that arise from anemia and providing education about the treatment of anemia in addition to using pharmacological drugs, one of which is by consuming foods that contain Contains vitamins and iron to increase Hemoglobin levels in the blood. The activity method consists of three, namely planning, implementation and evaluation. This counseling was carried out offline at SMKN 1 Rembang with 40 students. Based on the results of the pre-test and post-test, it can be concluded that there was an increase in students' knowledge about anemia prevention and non-pharmacological management. increasing knowledge of young women before and after education

Anemia in pregnant women is a serious health problem in Indonesia, with a prevalence of 48.9% based on the 2018 Riskesdas data. This condition can have negative impacts on the health of both the mother and the fetus, such as increased risks of premature birth, low birth weight babies, and maternal and infant mortality. Anemia in pregnant women is generally caused by deficiencies in iron, folic acid, and vitamin B12. This community service activity aims to educate the public about preventing anemia among pregnant women, conducted at the Dahlia Posyandu in the working area of Puskesmas Ariodillah Palembang. The activities include outreach on the signs, symptoms, causes, and prevention of anemia, as well as hemoglobin (Hb) level examinations for early detection of anemia. The methods used are interactive socialization and health examinations, involving posyandu cadres and the surrounding community. The examination results indicate that no pregnant women were found to be anemic, and participants’ knowledge of anemia increased by 95% after attending the outreach. This activity is expected to raise public awareness of the importance of anemia prevention and health during pregnancy. Recommendations for follow-up programs include ongoing education, improving access to health services, and attention to the health of the elderly in the area.

Indonesia is renowned for its rich tropical flora diversity, and Kalimantan Island stands out for its exceptional fruit variety. Three fruits, ramania, kapul, and ihau fruits, have drawn particular interest due to their potential health benefits and possible uses in the food and pharmaceutical industries. Nevertheless, these fruits are rarely explored comprehensively. So, this study offers a better understanding of the diverse fruits found in Kalimantan through a comparative analysis of literature data. This literature review aims to provide valuable insights into the nutritional and bioactive properties of these fruits and highlights their potential health benefits. The results from various previous studies exhibited that the exotic and indigenous fruits from Kalimantan, including ramania, kapul, and ihau fruits, are packed with essential nutrients like proteins, fats, carbohydrates, vitamins, and bioactive compounds that act as anti-aging, anti-bacterial, anticancer, antioxidants, and other bioactivities. Moreover, Kalimantan's exotic and indigenous fruits also have great potential as ingredients for functional food or pharmaceutical production. However, further research is necessary to fully explore their potential and innovative applications in various industries.

Nutritional status influences various factors related to health, knowledge, economy, environment and culture. Nutritional problems arise because of an imbalance between physical activity and adolescent nutritional intake. Nutritional problems in adolescents can affect psychological performance, productivity and achievement. The impact is in accordance with nutritional status, namely poor nutritional status raises the risk of infectious diseases, whereas overnutrition and obesity raise the risk of various degenerative diseases. Food intake is the variety of food and drink the body needs at any time.  Physical activity is any activity carried out because of business needs. Nutritional status is the final balance of nutritional intake in physical condition and food intake. Objective: Research to determine food intake and physical activity with nutritional status. Method: This research is a descriptive design using a simple random sampling method with a population of 258 respondents and a sample of 72 respondents. This research instrument uses a food recall questionnaire, activity recall and BMI measurement. Results: research shows that 53 respondents (73.6%) lack energy. 60 respondents (83.3%) lack carbohydrates. Protein is more 44 respondents (61.1%). 40 respondents (55.6%) lack fat. Vitamins are more than 46 respondents (63.9%). 59 respondents (81.9%) lack minerals. Lack of water for 72 respondents (100%). Light physical activity 70 respondents (97.2%). Underweight nutritional status of 52 respondents (72.2%). Conclusion: Based on the research results, it is found that the majority of students have poor food intake and physical activity with the nutritional status of teenagers. Researchers urge people to pay more attention to healthy food intake, sufficient activity and good nutritional status.

Toinaman Hamlet is located on Moa Island, the condition of the hamlet is remote, limited infrastructure, minimal access to basic services and is an isolated hamlet.  Most of the residents in this hamlet are very dependent on the weather and natural products to survive. When natural conditions are unfavorable, such as storms, drought or rough seas, their source of livelihood is significantly disrupted. This of course greatly affects the ability of local hamlet communities to be able to meet their nutritional food needs, especially to fulfill their children's nutrition. Fulfilling nutrition for children in rural areas often faces its own challenges, especially related to access to a variety of nutritious foods. Some common problems include limited food ingredients, traditional diets that may lack diversity, and limited knowledge about nutrition. One source of nutritious food that is important for health is beef.  Beef is a good source of protein for children because it contains many important nutrients such as iron, zinc and vitamin B12, all of which support their growth and development. The PKM activity carried out is in the form of providing nutritious food in the form of processed beef to the children of Toinaman Hamlet, Moa Island. The aim is to improve the nutrition of the hamlet children, prevent malnutrition and nutritional deficiencies and support the growth and development of the children of Toinaman Hamlet, Moa Island. This research aims to develop innovations in the manufacture of cookies with the addition of sorghum flour and mung bean flour (Vigna radiata) as the main ingredients. Sorghum flour was chosen because it has a high fiber content, is gluten-free, and rich in antioxidants. Mung bean flour was chosen because it is rich in vegetable protein, fiber, vitamins, and minerals that are important for health. The main objective of this study was to evaluate the effect of adding both types of flour on the physicochemical characteristics, texture, taste, and color of cookies. The research method involved the formulation of various proportions of sorghum flour and mung bean flour, as well as organoleptic tests to assess consumer preferences. Tests were conducted using chemical analysis to determine nutrient content as well as sensory tests to assess texture, taste, and color attributes. The results showed that the addition of sorghum flour and mung bean flour can increase the nutritional content of cookies, especially in terms of fiber and protein.In addition, the combination of these two flours provides a crispier texture and distinctive flavor, which is different from conventional cookies. Overall, this innovation offers a healthier alternative for consumers without compromising the sensory quality of the cookies. The use of sorghum flour and mung bean flour in making cookies not only increases the nutritional value but also fulfills the market need for healthier food products. These findings make an important contribution to the development of functional food products that can be accepted by various groups of people.

Tomatoes are plants that were first discovered in South America, closely related to eggplant, potatoes and peppers. Tomato is a fruit that has an attractive red color and is rich in vitamins such as vitamin C. So it is not wrong if tomatoes are very useful for maintaining the body's immune system. Each 100 grams of tomatoes contains 20 calories of calories, 1 gram of protein, 0.3 grams of fat, 4.2 grams of carbohydrates, 5 milligrams of calcium, carotene (vitamin A) 1500 SI, thiamin (vitamin B) 60 micrograms, ascorbic acid (vitamin C). ) 40 milligrams, phosphorus 27 milligrams, iron 0.5 milligrams, potassium 360 milligrams. Tomatoes are also vegetables or ingredients for cooking that are sought after by people to meet their daily needs. This makes the supply of tomatoes from farmers is always in shortage. The lack of supply of tomatoes in the market is caused by a decrease in tomato production or yields. This decrease in production was caused by several obstacles, one of the obstacles that caused crop failure was due to disease. Disease attacks on tomato plants can occur from planting to harvest. Diseases that often attack penicillin plants are sptoria leaf spot, anthracnose fruit bud, fusarium and verticium wilt, brown spot and late blight. Therefore, to handle this, of course, sufficient knowledge is needed to deal with and deal with pests and diseases in tomato plants appropriately. To overcome this, it is necessary to build a system that can diagnose diseases in tomato plants. So that farmers are able to overcome and deal with pests and diseases on tomato plants appropriately. Researchers have done a lot of research by building an expert system to diagnose a disease. With the results of research, an expert system is designed to assist farmers and agricultural extension workers in detecting diseases in soybean and rice plants. From the results of tests that have been carried out using an expert system, 14 different cases in the field are then cross-checked with the results of expert analysis and have a suitability of 93%.

Background: Menstrual pain in the world is very high, 50% of women worldwide, Bulgaria 8.8%, Finland 94% while Indonesia 64.25%. Menstrual pain causes short and long term adverse effects including interference with daily activities and even an increase in absenteeism at the campus, long-term effects cause tissue growth outside the uterus. Menstrual pain can be treated with pharmacological and non-pharmacological therapies. One of the non-pharmacological therapies is inhaling lemon aromatherapy. Limeone contains lots of vitamin C which will control prostaglandins and reduce pain. Objective: To describe the results before and after the application of lemon aromatherapy on reducing menstrual pain. Methods: Case study with descriptive design on 2 respondents who were given lemon aromatherapy for 15 minutes twice a day for 2 days, and measured using Numeric Rating Scale. Results: After lemon aromatherapy was performed on both respondents with menstrual pain, it showed a decrease in the pain scale from moderate pain to mild pain. Conclusion: The application of lemon aromatherapy can reduce menstrual pain in female students from moderate to mild

Carrots are one of the abundant agricultural products in Wonolelo Village, Magelang. This type of root vegetable contains various nutrients such as Vitamin A, β-carotene, and fiber, which are beneficial for eye health and boosting the immune system against infections. The consumption of fresh carrots is less favored by the community, especially children, so carrot-based processed products in the form of healthy beverages like carrot ice cream can be an attractive and healthy alternative for consumption. The purpose of this activity is to explore the processing of carrots to maximize harvests and optimize the selling value and functionality of carrots as a healthy and appealing product for children. This training uses practical methods, allowing participants to practice and directly process carrots into ice cream. The conclusion of this activity is that it provides insight into carrot processing innovations for the PKK mothers in Wonolelo Village, specifically on how to turn carrots into ice cream, thereby increasing the selling value of carrots, which impacts the welfare of the community, especially carrot farmers.

Background: Dysmenorrhea is pain experienced during or just before menstruation and is one of the most common gynecological issues affecting women of all ages. Primary dysmenorrhea occurs 6 to 12 months after the first menstruation and is caused by high levels of prostaglandins released from endometrial secretions, leading to painful uterine contractions. Carrots are a vegetable rich in vitamin E, which can help block the formation of prostaglandins and counteract the effects of increased production of prostaglandin hormones. Objective :To analyze the difference in dysmenorrhea pain levels before and after consuming carrot juice. Method : A one-group pretest-posttest approach was used, conducted in Ngablak Village, Kenteng Nogosari, Boyolali, in April-May, involving 20 respondents. Data processing was done using the Wilcoxon statistical test. Results: The majority of respondents before consuming carrot juice (100%) experienced severe pain. After consuming carrot juice, out of 20 respondents (100%), 6 (30.0%) experienced a reduction to mild pain, and 14 (70.0%) experienced a reduction to moderate pain. The Wilcoxon test results showed a significant effect of carrot juice on dysmenorrhea in adolescents, with a p-value of 0.00 (p < 0.05). Conclusion: There is an effect of consuming carrot juice on the reduction of dysmenorrhea in adolescents in Ngablak Village.

Wontons consist of skin and filling. Generally, wonton skin is made from wheat flour, oil, water and salt. In this research, wonton skin was made with different characteristics by replacing wheat flour with tangmien flour. The wheat flour in wonton skin can be replaced 100% with tangmien flour because it has fine and soft characteristics which make the wonton skin color more transparent white and have a flexible texture. One effort to increase nutritional value and appearance is by adding green spinach (amarathus hybridus l.) juice. Green spinach contains chlorophyll which can be used as a natural coloring in food processing. Green spinach is mixed with 20gr, 40gr and 60gr of tangmien flour which is useful for changing the color of the wonton skin so that it has different color variants. Research Objectives: 1) To determine the sensory quality of wonton skin which includes color, texture, aroma and taste; and 2) To determine the nutritional content which includes energy, carbohydrates, fiber, iron, and vitamins A, B, C. This research uses an experimental method. The data collection technique was carried out by observation using a questionnaire sheet in the form of an instrument with 30 panelists. The data analysis technique used was single ANOVA followed by Duncan's test. To determine the nutritional content (energy, carbohydrates, fiber, iron, and vitamins A, B, C) laboratory tests are carried out. The results of the research show: 1) There is an effect of substitution of green spinach juice on the sensory quality of color and no effect on the sensory quality of texture, aroma and taste; and 2) The nutritional content of the product is Energy 305.80 kcal/100g, Carbohydrates 38.60%, Fiber 3.80%, Iron 2.85 mg/100g, Vitamin A 98.65mg/100g, Vitamin B 4.15mg /100g, Vitamin C 8.10mg/100g.   Keywords: , , ..
