Breast milk (ASI) is the primary and best food for infants because it contains almost all the nutrients in the right composition to meet the needs of the baby for optimal growth and development. Breastfeeding mothers require additional nutrients such as carbohydrates, protein, and iron. One of the food ingredients that contains carbohydrates, protein, and iron is sorghum and katuk leaves. Sorghum is rich in carbohydrates and protein, while katuk leaves contain lactagogue, which helps increase breast milk production. This study aims to analyze the effect of sorghum flour substitution and the addition of katuk leaves in wet noodles on the level of preference, organoleptic quality, and nutritional content of wet noodles as an alternative food for breastfeeding mothers. This study used a true experimental method with a 3x2 factorial design, involving three levels of sorghum flour substitution (10%, 20%, 30%) and two levels of katuk leaf flour addition (2%, 4%). A preference test was conducted with 35 panelists, while an organoleptic quality test was conducted with 25 panelists using a hedonic scale, analyzed with Friedman, Wilcoxon, and Two-Way Anova tests. The results showed that sorghum flour and katuk leaf flour substitutions significantly affected preference levels in terms of color, aroma, texture, and taste, with formula X1Y1 being the most preferred. Sorghum flour and katuk leaf flour substitution affected the organoleptic quality parameters of color and texture but did not influence aroma and taste. The best nutritional content of noodles from the preference test in formula X1Y1 (10% sorghum, 2% katuk leaves) per 100 grams was 6.08% protein, 42.51% carbohydrates, and 3.11% iron.

Chronic Energy Deficiency (CED) in pregnant women can cause children born with cognitive decline, risk of stunting, and risk of chronic diseases in adults. The problem of pregnant women in CED is caused by low nutritional intake. Pregnant women with anemia are at 4.13 times greater risk of giving birth to children with short birth length compared to mothers who are not anemic. CED in pregnant women can cause risks and complications including anemia, bleeding, maternal weight does not increase normally and contracting infectious diseases. CED in pregnant women can affect the growth process of the fetus and can cause miscarriage, abortion, stillbirth, neonatal death, congenital defects, anemia in infants, intrapartum asphyxia, and low birth weight (LBW). Based on a survey conducted at the Cendana Putih Health Center, 45 pregnant women experienced CED (12.4%) in 2023. The problems that occur can be overcome by holding a collaborative program that can improve the health of pregnant women. This program can be used to address problems appropriately, namely by empowering pregnant women and cadres through GerCep CED. The design used in this program is community service activities carried out in the form of education in the form of providing pocket books and conducting direct counseling during the schedule of pregnant women's classes and assistance in making PMT from local food ingredients. The conclusion of this activity is that participants who initially had a low level of knowledge of KEK in pregnant women became more knowledgeable about KEK in pregnant women.

This study discusses the influence of the waste bank program on fulfilling household nutrition in Belawan II. In this context, the problem of child nutrition is a major challenge, especially in urban areas with low economic levels. Medan Belawan District faces nutritional problems due to limited access to nutritious food and low community income, which often hinders the fulfillment of balanced nutrition for children and other vulnerable groups. In addition, this study also highlights the relationship between waste problems and child nutrition, where suboptimal waste management has a negative impact on environmental health and the quality of life of the community. This has the potential to hinder the growth and development of children who should get adequate nutritional intake. The waste bank program is expected to increase family income through better waste management, which in turn can improve access and quality of food consumed by households. Thus, this program not only functions as a solution to waste management, but also as an intervention that supports improving household nutrition in the community. This study uses a descriptive qualitative approach to describe the presence of the digital waste bank movement as a digital-based environmental movemen that can have a positive impact on fulfilling household nutrition in Belawan II, especially amidst the challenges faced during the pandemic.

A new snack innovation that is high in albumin and iron content in the form of dumplings uses snakehead fish substitution and the addition of Moringa leaves. The aim of this research was to determine the effect of snakehead fish substitution, the addition of Moringa leaves, the interaction of the two factors on the acceptability of dumplings (color, aroma, taste, texture), as well as the best albumin and iron content of dumplings. This research used an experimental method with a 3x2 factorial design which resulted in 6 treatments. The data collection technique uses a sensory test based on the liking level of 50 untrained panelists. The results of the sensory test data were analyzed using the Two Way Anova Test followed by the Duncan Test to determine significant differences in results, as well as to determine the best dumplings. Based on the results, the acceptability of dumplings only had an effect on texture, and had no effect on color, aroma, taste, either from the substitution of snakehead fish or the addition of Moringa leaves, while the interaction between snakehead fish substitution and the addition of Moringa leaves had no effect on color, aroma, taste and texture. The best dumplings are snakehead fish (100%) and Moringa leaves (20%) with a nutritional value of 4.10 mg albumin and 2.10 mg iron per 100 grams. The conclusion of this research is that substitute snakehead fish dumplings and the addition of Moringa leaves only affect the texture, however, the dumplings can still be consumed by the panelists and are useful for increasing albumin levels and body endurance as well as speeding up wound healing.
