This study aimed to determine the effect of different levels of beef liver addition on the nutritional, physicochemical, and color characteristics of chicken patties. Beef liver, an underutilized animal by-product with high nutritional value, was incorporated at different levels (0%, 20%, 40%, and 60%) into chicken patty formulations. The experiment was conducted using a Completely Randomized Design with four treatments and five replications. The collected data were analyzed using analysis of variance (ANOVA) and followed by Duncan’s Multiple Range Test (DMRT). The results showed that the addition of beef liver had no significant effect (P>0.05) on protein content, water activity (aw), and b* values, but had a highly significant effect (P<0.01) on moisture content, fat content, cooking loss, texture, and color characteristics (L* and a*). Increasing beef liver levels improved the nutritional profile and modified the physical and visual characteristics of the patties. These findings demonstrate the potential of beef liver as a value-added functional ingredient for developing nutritious chicken patties while promoting the sustainable utilization of underutilized livestock by-products.

Cattle farming plays a strategic role in rural economic development by generating employment, supplementary household income, and contributing to food and nutritional security. However, in Indonesia, most smallholder cattle enterprises remain traditional and small-scale, leading farmers to treat livestock farming primarily as a secondary livelihood. While previous studies have largely focused on technical adoption and production performance, limited attention has been given to farmers’ psychological interest as a foundation for sustaining livestock enterprises. Therefore, this study aims to analyze the level of community interest in cattle farming and examine the influence of farmers’ characteristics (age, education level, herd size, number of family dependents, farming experience, and primary income) on such interest. A quantitative survey was conducted involving 34 cattle farmers in Taji Village, Jabung District, Malang Regency, selected using total sampling. Data were collected through structured questionnaires and analyzed using multiple linear regression. The findings reveal that community interest in cattle farming is generally high, as reflected in emotional (3.93), cognitive (3.81), and conative (3.74) dimensions measured on a four-point Likert scale. Regression results indicate that age has a significant positive effect (p = 0.022), whereas farming experience has a significant negative effect (p = 0.025) on interest levels. Other variables show no statistically significant influence. These findings highlight that psychological engagement in cattle farming is shaped more by demographic and experiential factors than by formal education or income level. The study contributes to the literature by positioning interest as a psychological determinant of livestock sustainability. Policy implications emphasize the urgency of risk-mitigation extension programs to address farmer burnout, incentivized intergenerational knowledge transfer, and cooperative-based institutional support to ensure smallholder livestock sustainability.

Stunting is a chronic nutritional problem that remains a major public health challenge in Indonesia, including in Ngombakan Village, Polokarto District, Sukoharjo Regency. Moringa leaves (Moringa oleifera Lam.) are known as a superfood plant with nutritional content far exceeding conventional food ingredients, including protein, vitamin A, calcium, potassium, iron, and vitamin C, making them highly potential as a functional food for stunting prevention. This community service activity aims to improve the knowledge of mothers at the Posyandu of Ngombakan Village about stunting and the benefits of moringa leaves, while also introducing the innovation of moringa leaf pudding as a nutritious supplementary food for toddlers. The activity was carried out from August 13 to September 6, 2024 through 6 meetings at the posyandu using lecture methods, leaflet distribution, and pudding-making demonstrations. The results showed a significant increase in mothers' knowledge about stunting and the nutritional content of moringa leaves, as well as positive enthusiasm from participants in accepting moringa leaf pudding as an affordable and nutritious supplementary food alternative for toddlers.

The Free Nutritious Meal Program (MBG) is a national priority program aimed at improving students’ nutritional status as part of efforts to enhance the quality of human resources. The success of this program is determined not only by nutritional fulfillment but also by the quality of governance in its implementation. This study aims to analyze the application of Good Governance principles in the Free Nutritious Meal Program at SMP Negeri 13 Surabaya. A qualitative method with a case study approach was employed. Data were collected through observation, interviews, documentation, and document analysis involving students, parents, teachers, and personnel from the Jemur Wonosari 1 Nutrition Program Service Unit (SPPG). Data were analyzed using the Miles and Huberman interactive model, consisting of data condensation, data display, and conclusion drawing. The findings indicate that the implementation of the Free Nutritious Meal Program has reflected most Good Governance principles, particularly in terms of regulatory compliance, equitable service access, implementation effectiveness, and stakeholder coordination. However, improvements are still needed in beneficiary participation, information transparency, evaluation mechanisms, and program feedback systems. These findings provide important implications for strengthening the governance of the Free Nutritious Meal Program to become more participatory, transparent, accountable, and sustainable.

This study aims to determine adolescents’ acceptance of mackerel turbin quiche, identify the best formulation of the product, and analyze its nutritional content. This study used an experimental method. The results showed that the mackerel turbin quiche product that was well accepted by adolescents was F1, which used 250g of mackerel, 125g of tofu, and 375g of red beans. The best formulation of mackerel turbin quiche used ingredients divided into three (3) parts: crust, filling, and custard. The quiche crust consisted of 500g wheat flour, 300g margarine, 135g powdered sugar, 15g powdered milk, and 2 egg yolks. The filling consisted of 250g mackerel, 375g red beans, 125g tofu, and 100g onion. The custard consisted of 1000 ml UHT milk, 10 egg yolks, 6g salt, 3g ground pepper, and 3g ground nutmeg. Each 45g serving of mackerel turbin quiche contained 194.34 Kcal of energy, 21.60g carbohydrates, 10.09g fat, and 5.69g protein. It can be concluded that mackerel turbin quiche can be used as a healthy snack alternative for adolescents.

This study aimed to examine the association between physical activity and nutritional status as risk factors for noncommunicable diseases among women of reproductive age. A descriptive quantitative study with a cross-sectional approach was conducted in Kranggan Village involving 35 respondents selected through purposive sampling. Data on physical activity were collected using questionnaires, while nutritional status was assessed based on Body Mass Index (BMI). The findings showed that most respondents had moderate physical activity levels (51.4%), followed by low physical activity levels (42.8%). Regarding nutritional status, the majority of respondents were classified as overweight (51.4%) and obese (28.6%). Statistical analysis demonstrated a significant relationship between physical activity and nutritional status (p = 0.003). The results indicate that inadequate physical activity is associated with increased nutritional status problems, particularly overweight conditions. Therefore, low physical activity and excessive body weight represent interconnected risk factors contributing to the development of noncommunicable diseases among women of reproductive age. This study highlights the importance of promoting regular physical activity and maintaining balanced nutritional status as preventive strategies to reduce the risk of noncommunicable illnesses.

Background: Stunting remains one of the public health problems that requires early prevention through health education and growth monitoring in children under five years old. Lack of parental knowledge regarding balanced nutrition, child feeding practices, hygiene, and routine physical examination can increase the risk of growth disorders in toddlers. Purpose: Physical examination in toddlers is important to identify early signs of growth and developmental problems, including body weight, height or length, nutritional status, and general physical condition. Method: This community service activity was conducted face-to-face using health education, discussion, and direct physical examination methods. The stages of activity included preparation, delivery of educational materials about stunting, physical examination of toddlers, recording the results, and providing simple counseling to parents. Results: The activity showed that mothers were enthusiastic in participating in counseling and toddler physical examination. Before the education was given, several mothers still had limited understanding about the causes, impacts, and prevention of stunting. After the activity, mothers began to understand the importance of balanced nutrition, routine weighing, height measurement, immunization, hygiene, and regular visits to posyandu or health facilities. Conclusion: Education about stunting and physical examination of toddlers can increase parental awareness regarding early prevention of growth disorders. This activity is useful in encouraging families to monitor toddler growth regularly and implement healthy childcare practices.

This community service initiative aims to enhance the knowledge and skills of the residents of Ilih Village, Damer District, Southwest Maluku Regency, regarding the use of banana corms as a nutritious and cost-effective alternative food source. Banana corms have historically been underutilized and generally treated merely as agricultural waste. Through training and mentoring sessions, the community was educated on the nutritional content of banana corms, processing techniques, and business opportunities for home-based banana corm nugget production. The methods employed included outreach, demonstrations, hands-on nugget-making training, and an evaluation of the activity's outcomes. The results indicate a high level of community enthusiasm for the innovation of processing banana corms into nuggets. Following the activity, participants demonstrated increased knowledge regarding the utilization of local food ingredients, hygienic processing techniques, and the economic potential of the processed product. The banana corm nuggets offered a pleasant taste and appealing texture, and were well-received by the community. Furthermore, the product's low production cost suggests it could serve as a source of additional income for villagers. This initiative is expected to support local food security and improve community welfare through the development of food businesses based on local resources.

Nutritional problems among adolescents are increasingly associated with unhealthy dietary habits and low physical activity, contributing to the rising prevalence of overweight. According to the 2023 Indonesian Health Survey, overweight prevalence among adolescents ranges from 12% to 16.2%. This study aimed to develop Zea Coffee Tab, a functional beverage made from Robusta coffee and corn silk containing bioactive compounds, including caffeine and flavonoids, which may support metabolism and body fat oxidation. An experimental method with a Completely Randomized Design (CRD) was employed. The evaluated parameters included organoleptic tests (hedonic and hedonic quality) involving 30 semi-trained panelists, proximate analysis, and identification of bioactive compounds. Data were analyzed using the Kruskal–Wallis, Mann–Whitney, One-Way ANOVA, and Duncan’s multiple range tests. Three formulations were tested: F1 (30% Robusta coffee:70% corn silk), F2 (50%:50%), and F3 (70%:30%). The findings showed that F3 was the most preferred formulation, with an acceptance score categorized as “very much liked.” The product contained energy ranging from 319.20–324.26 kcal/100 g, protein 5.12–5.34%, fat 0.48–0.58%, carbohydrates 73.85–74.51%, moisture 9.12–9.66%, ash 2.10–2.32%, caffeine 182.45–205.86 mg/100 g, and flavonoids 4.28–6.03 mg/100 g. Zea Coffee Tab has the potential to serve as a healthy functional beverage for overweight adolescents. Further studies on shelf life and clinical effectiveness are recommended to support product commercialization.

Complications of Diabetes Mellitus often arise and without being realized have developed to cause acute and chronic complications that make it difficult for DM sufferers to maintain their condition and will affect the condition of DM sufferers that impact the quality of life of sufferers. Consuming too many carbohydrates causes insulin in the body to work extra, so that the insulin's ability to work in the body will be reduced, which can cause blood sugar to rise. Nutritional therapy can be done by replacing carbohydrate intake with tubers that are low in glucose levels, one of which is Ganyong and pharmacological therapy through herbal medicines, one of which is sentalo leaf tea which is easily obtained and inexpensive. The objectives of this community service activity are to improve the knowledge, skills and quality of service of partners in the implementation of family posyandu related to DM. The method used is empowering posyandu groups through educational activities and training. The results of this activity show an increase in knowledge and skills of partners before and after the community service activity was carried out. And an increase in visits to the posyandu after the implementation of PMT using ganyong flour as the raw material.

Nutritional problems among school-age children remain an important challenge in human resource development in Indonesia. Adequate nutritional status is essential for supporting physical growth, cognitive development, learning achievement, and future productivity. Schools play a strategic role in promoting children's health through nutritional monitoring and educational interventions, particularly during the implementation of the Free Nutritious Meal Program (MBG). This community service activity aimed to monitor students’ nutritional status and strengthen awareness of the importance of nutrition as a foundation for human resource development. The activity was conducted on April 5–6, 2026, at SD Negeri 09 Jambi City and involved 261 students from grades I to III. A school-based assistance approach was implemented through anthropometric measurements, including body weight and height assessments, followed by balanced nutrition education. The findings revealed that 77.0% of students had normal nutritional status, while 8.8% were undernourished, 9.6% were overweight, and 4.6% were classified as obese. The activity also increased school awareness regarding the importance of continuous nutritional monitoring and evidence-based health management. These findings suggest that school-based nutritional monitoring can support the implementation of the Free Nutritious Meal Program and serve as an initial effort to strengthen human resource development by fostering healthier, more productive, and higher-quality future generations.

The government policy known as the Free Nutritional Meal Program (MBG) aims to improve public nutrition and reduce stunting rates in Indonesia. The purpose of this study is to examine the MBG Program from a political perspective, particularly considering political dynamics, legal risks, and fiscal issues. This research was conducted through literature review, reviewing various journals and academic sources. The results indicate that the MBG not only has social impacts but also influences political interests, poses risks to legal enforcement, and disrupts the sustainability of the state budget. Therefore, for the program to be successful and sustainable, strong regulations and oversight are required. Furthermore, this populist program is often utilized as an instrument for power legitimacy, demanding compromises between the executive and legislative branches during its budget approval process. Without a detailed legal framework, the policy's implementation is highly vulnerable to overlapping institutional authority and potential misappropriation of funds. Ultimately, technology-based monitoring strategies and accountable governance are the main keys to maintaining the stability of the State Budget (APBN).

The Free Nutritious Meal Program (MBG) is a free school lunch initiative in Indonesia introduced during the administration of Prabowo Subianto. This study aims to examine the effectiveness of the government's MBG (Free Nutritious Meal) program on kindergarten students' learning interest through a literature review approach. The background of this study is based on the issue of low student learning interest, which is influenced not only by pedagogical factors but also by physical conditions, particularly nutritional intake. This research employed a qualitative approach using a literature review method. The data sources consisted of scientific articles published within the last five years and accessed through Google Scholar. Data were collected through documentation studies, while thematic synthesis was used for data analysis. The findings indicate that the MBG program has a significant positive impact on improving students' learning interest, particularly in terms of attention, motivation, participation, and attendance. The results also reveal that meeting students' physiological needs contributes to their cognitive and emotional readiness to learn. However, the effectiveness of the program is influenced by the quality of its implementation and management in the field. Therefore, more optimal program management and continuous evaluation are needed to maximize its impact on improving the quality of learning.

Background: Hepatocellular Carcinoma (HCC) is an abnormal cell growth in the liver characterized by increased number of dividing liver cells accompanied by malignant transformation. A common paraneoplastic phenomenon in HCC patients is hypoglycemia, which arises due to hepatic dysfunction impairing gluconeogenesis and glycogenolysis, as well as tumor-mediated IGF-II production. This condition causes hypoglycemia as a primary nursing problem requiring comprehensive nursing care. Objective: To describe the nursing care process for a patient with HCC focusing on blood glucose instability management and knowledge deficit intervention. Methods: This study used a descriptive qualitative method through a case study approach. Data were collected through interview, observation, documentation study, and literature review. Results: Two nursing diagnoses were identified: blood glucose instability related to hepatic dysfunction and knowledge deficit related to lack of information exposure. Nursing interventions performed included hypoglycemia management and disease process education. After 2x24 hours of nursing implementation, both diagnoses were partially resolved, as GDS values remained fluctuating and behavioral change had not been fully achieved. Conclusion: Comprehensive nursing management through routine blood glucose monitoring, dextrose administration, nutritional modification, and health education can improve blood glucose stability and patient knowledge in HCC patients.

Balanced nutrition intake is an important factor in supporting the performance of young athletes, especially during the growth period that requires optimal nutrition for intense physical activity. However, the lack of nutritional knowledge among parents of young athletes often leads to nutritional imbalances that have a negative impact on athlete health and performance. This study aims to measure the effect of balanced nutrition education on improving the knowledge and attitudes of parents of athletes at the Kancil Mas Football School (SSB), Karawang. The method used was a quasi-experiment with a pre-test and post-test design involving 20 respondents who were parents of U-13 athletes. Education was provided in the form of direct counseling sessions and group discussions, which were supplemented with supporting materials such as leaflets. The Wilcoxon signed rank test was used to analyze changes in parental knowledge and attitude scores before and after the intervention. The results of the analysis showed a significant increase in parents' understanding and positive attitudes towards balanced nutrition after education (p < 0.05). The results showed a significant increase in the level of parents' understanding and positive attitudes towards nutrition after the education intervention. These findings highlight the importance of active parental involvement in ensuring that young athletes' nutritional needs are met, as well as providing a basis for developing nutrition education programs in other sports schools.

This community service study documents and analyzes a blood glucose screening program conducted by theology students of STT Kadesi–Bogor at the Pentecostal Church (Gereja Pantekosta Jakarta/GPJ) in West Jakarta from February to April 2026. A total of 80 examinations were performed over three consecutive months using the Accu-Check glucometer. Results revealed that 1 participant (1.25%) was classified as diabetic (random blood glucose/RBG ≥200 mg/dL) and 19 participants (23.75%) were classified as pre-diabetic or at elevated risk (RBG 126–199 mg/dL), bringing the total at-risk proportion to 25%. The mean participant age was 52.7 years (range: 21–82 years). Women constituted 78.75% of all participants and accounted for 70% of at-risk cases, while men showed a proportionally higher per-capita risk rate (35.3% vs. 22.2%). Five female participants recorded borderline-low glucose levels (70–75 mg/dL), indicating potential nutritional inadequacy. This study contextualizes its findings within biblical theology—particularly 1 Corinthians 3:16, which declares the human body to be the temple of the Holy Spirit—providing a theological imperative for holistic health stewardship. Practical recommendations include adoption of a balanced diet, engagement in regular physical activity, and periodic blood glucose monitoring as expressions of faithful bodily stewardship.

Background: Acute pharyngitis is an inflammation of the pharynx caused by viral or bacterial infections, frequently resulting in sore throat, fever, and dysphagia. This condition is among the most prevalent acute respiratory tract infections in children and adolescents worldwide, contributing significantly to morbidity and the burden of healthcare services. Objective: This case study aimed to describe the comprehensive nursing care provided to patient An. F with acute pharyngitis at Ward Anggrek 1, RSUD dr. Soeselo, Tegal Regency. Methods: A descriptive study design with a nursing process approach was employed. Data were collected through anamnesis, physical examination, observation, and documentation review. The nursing process encompassed assessment, nursing diagnosis, intervention planning, implementation, and evaluation. Results: Assessment revealed chief complaints of throat pain (NRS scale 5), fever (38.8°C), erythematous tonsils, and nutritional deficit. Three nursing diagnoses were established: acute pain related to physiological injury, hyperthermia related to disease process, and knowledge deficit related to insufficient information exposure. Interventions included pain management, hyperthermia management, and health education. Following two days of nursing care, the patient’s condition significantly improved, with pain scale reduced from 5 to 3 and body temperature normalized to 37.7°C. Conclusion: Comprehensive nursing care incorporating pharmacological and non-pharmacological approaches effectively reduced pain and fever, and improved patient and family health literacy regarding acute pharyngitis.

The Free Nutritional Meal Program (MBG) is a government policy that is widely discussed by the public through social media, especially TikTok. Various comments that have emerged indicate differences in public opinion towards the program, so an analysis is needed to determine the tendency of public sentiment. This study aims to analyze TikTok user sentiment towards the Free Nutritional Meal Program using the Naive Bayes method. The research method is carried out through several steps, namely collecting TikTok comment data, preprocessing text, labeling sentiment data into positive, negative, and neutral, feature transformation using TF-IDF, and classification using the Naive Bayes algorithm. Based on the analysis of 500 comment data, the results show that positive sentiment dominates public opinion by 42% (210 data), followed by negative sentiment by 36% (180 data), and neutral sentiment by 22% (110 data). Testing the classification model using Naive Bayes produces excellent performance with an accuracy rate of 86%, precision of 84%, recall of 85%, and F1-score of 84%. The conclusion of this study shows that the Naive Bayes method is effective as an approach in social media sentiment analysis to map public responses to government policies.

A balanced diet is a daily dietary pattern that contains nutrients in types and amounts appropriate to the body's needs. Knowledge of balanced nutrition and healthy eating habits is an important factor in preventing nutritional problems among adolescents. A lack of understanding regarding appropriate food choices can lead to unhealthy eating behaviors. Therefore, nutrition education is needed to improve students’ knowledge and awareness of the importance of implementing a balanced diet in daily life. This counseling activity aimed to increase students’ knowledge regarding balanced dietary patterns. The activity was conducted on June 4, 2025, at State Junior High School 5 Kendari and involved 30 seventh-grade students as respondents. The counseling methods included lectures using PowerPoint media, an ice-breaking session in the form of the WHO six-step handwashing simulation, question-and-answer sessions, and interactive quizzes. Evaluation was carried out using pre-tests and post-tests to measure students’ knowledge levels before and after the counseling activity. The results showed an increase in the mean knowledge score from 68.40 in the pre-test to 89.67 in the post-test. The paired t-test analysis showed a Sig. (2-tailed) value of 0.000 (p < 0.05), indicating a significant difference between pre-test and post-test results. In addition, students gave positive responses to the counseling activity, stating that the material was interesting, easy to understand, and enjoyable. These findings indicate that balanced diet counseling was effective in improving students’ knowledge regarding the implementation of healthy eating habits in daily life.

Adolescents are a nutritionally vulnerable group at risk of double burden of malnutrition. Riskesdas 2023 data showed that the prevalence of undernutrition in adolescents aged 13–15 years in North Sumatra reached 16.8%, while overweight and obesity reached 18.3%. The habit of consuming unhealthy snacks at school is one of the main preventable risk factors through structured nutrition education. Objective: This community service program aimed to increase knowledge of balanced nutrition and healthy snack selection behavior among Grade VIII students of SMP Negeri 19 Medan. Methods: Activities were carried out through interactive lectures, demonstrations, educational games, and workshops with 64 students. Evaluation used pre-test and post-test analysis with Wilcoxon Signed Rank Test. Results: There was a significant increase in nutritional knowledge in both classes (p=0.001) and healthy snack selection behavior (p=0.000). Conclusion: The Healthy Teen School program effectively improved adolescent nutrition knowledge and behavior.
